Veggie dinner party and don't know what to cook!

I'm having some friends over for a meal on Wednesday evening and I'm looking for a recipe that fits into the below:

  • Needs to be vegetarian
  • Needs to be something that I don't need to be running back and forth to the kitchen for. Happy to cook something earlier and just keep it warm, but just want to avoid having to leave the room every 5 minutes.
  • Doesn't need to be anything fancy or difficult.
  • I make curry all the time and want to try something new, so preferably not that.

If it makes any difference, I'm in France so can't necessarily get loads of UK specified ingredients and things like veggie shepherds pie etc aren't what I'm going for.

Thank you to anyone who has ideas!

This is gorgeous and just sits in the oven. If you can't get freekeh you can use quinoa but to be honest I usually just get one of those supermarket packets of pre-cooked mixed grains.

The sauce is great - no worries about missing out birds of paradise or ajwain, I've never been able to find either and it's still lovely.

Veggie tarts? Puff pastry, variety of toppings eg roasted peppers, goats cheese, mozzarella, peppers, leeks, mushrooms? With garlic bread and a salad?

might be worth asking... I love aubergines but not everyone does. I took an aubergine dish to my friend's house and she said she doesn't like them (or coriander - weirdo)

I make ratatouille and once it’s nearly ready I add chickpeas to make it more substantial. Serve with couscous. You can make the couscous more exciting by adding chopped herbs and vegetable stick. Maybe some grilled halloumi served with rocket as a starter? The halloumi is the only thing that would need to be cooked just before being served.

Veg chilli using a bag of mexican veg from Picard with rice, tortilla chips (good luck finding nice ones in France) with guacamole.

I know @Carlissa, people are weird! To be fair, a friend's DH doesn't like a lot of veg and he's had that dish with just the grains and the tomatoes. Weirdo.

@GoGoGretaDoll I'm really not a big fan of aubergines but I'm on a mission to find a way to cook them that'll make them tasty to me, so I'm going to try this one and cross my fingers that it's the one :D

@whitehorsesdonotlie I like this idea, the tarts are really minimal faff and I can just prepare them and the salad before anyone turns up, then stick them in the oven when I'm ready..

Lots of recommendations for lasagne - I've got a recipe that I use but I'm not too keen on it so maybe I'll give one of the above a crack. I feel like it'll be a win, everyone likes lasagne Grin

I've just roasted some chopped butternut squash to put on some filo pastry sheets with feta, olives and thyme. Really simple buy looks like it will taste nice.

Thank you! Yes, you can prep the veg for the tart toppping then just heat it up and add to the tarts ten minutes before you want to serve them.

I use soured cream in mine so it makes it low fat too.

I'd also do camembert (you are in France after all) with a load of fresh veg sticks, crusty bread, olives etc
