If you are veggie, do you have a roast dinner?

We love a roast in our house. I would be happy with just the veg because I love them but DP likes something go go with it.

We normally have nut roast ( the bbc good food recipe) or quorn sausages. The DC are not that keen on nutroast though. What else can we do?

We always have Yorkshire puddings.

For Christmas dinner I usually do a big roasted butternut squash with a feta and breadcrumb topping. I can’t be bothered to make a that on a normal Sunday.

I quite fancy giving this a go but I doubt the DC would eat it and it is highly effort.

The Bosh! mushroom Wellington is great, especially for a few people or special occasion.

My dh makes me a delicious portobello mushroom stuffed with nut meat and cooked in the oven. You can put cheese and breadcrumbs on top too.

Or a green lentil loaf?

That sounds yummy. I like the stuffed mushroom idea too. I prefer a vegetable based option to a fake meat option.

We like the quorn roast but recently discovered the Linda McCartney roast thing which is like a roast chicken replacement. It’s the best I’ve had yet!
If we go to family for a roast I’ll just have veg and if we’re at a restaurant I’ll have nut roast but find it’s a bit hit and miss.
Very happy with just veggies though. One of my fave meals.

I often do a quorn family roast for DS. Leftovers are good drizzled with joney and grilled.

Whyisitsodifficult · 05/11/2021 21:47

Goodlife nut cutlets are lovely and not fake meat.

AliasGrape · 05/11/2021 21:49

Not that often although it’s silly because we love them.

When we do I have it with cauldron sausages or a veggie pie of some description - lidl used to do a lovely cauliflower cheese pie, not seen it in a while. I also really like the Linda McCartney cheese and leek plaits. Sometimes I make a veggie cheese bake - whatever veg, cheese sauce and topped with breadcrumbs which I guess could be done like a roast. A cauliflower ‘steak’ is another option - I had one in a restaurant once as it was the only veggie option and I was pissed off that was what I’d ended up with but actually when it came it was really really tasty.

We’ve done these for a few christmases - I usually stick a dollop of homemade cranberry sauce within the parcel for extra festive ness - sorry Delia! www.google.co.uk/amp/s/www.deliciousmagazine.co.uk/recipes/caramelised-leek-onion-and-camembert-parcels/amp/

I like puy lentils with a roast (and then leftover lentils in a pie the next day).

Sparticle · 05/11/2021 21:55

We will often have the quorn escalopes of their amazing country pies or DD’s fave the chicken and has lattices, but when we don’t want fake meat I use the Asda nut roast kit (you need to add most ingredients but it has the lentils, breadcrumbs and seasoning) and I like that.

Macsweens veg haggis is delicious but I can’t find it in the shops apart from around burn’s night :(

Sparticle · 05/11/2021 21:57

@Felldownabackdonhole could you please share the bbc nut roast recipe you normally use?

Whyisitsodifficult · 05/11/2021 22:04

Waitrose sell Macsween vegetarian haggis and M&S also have a version.

weasle · 05/11/2021 22:53

Goodlife nut cutlets here too. Occasionally falafel.
I don't like quorn or fake meat like Linda M.
I often forget (it's just me who is veggie) and have extra roast potatoes and veg instead! I always do a broccoli and cauliflower cheese.
Butternut squash and feta sounds delicious, do you have a recipe?

pickingdaisies · 05/11/2021 22:59

I used to like sage and onion stuffing balls just to add that savouryness - is that a word? Sorry it's past my bedtime. Doesn't add anything in the way of protein, but if you could incorporate some nuts or pulses you'd be sorted

IamMummyhearmeROAR · 05/11/2021 23:04

Vegan Pukka pie is what my dd has every Sunday when the rest of us have a roast

3asyp33l3r · 06/11/2021 05:21

My daughter has The Vegetarian Butcher What the Cluck chicken pieces. I just wrap a few pieces in foil and put in the oven near the end.

www.bbcgoodfood.com/recipes/stuffed-butternut-squash-quinoa It was originally this but we use breadcrumbs instead of quinoa.

I do like a quorn roast and you get lots left for sandwiches throughout the week but DP doesn’t like it.

I love stuffing balls. I add cranberries and pine nuts. I only have them at Christmas normally but I might make them this weekend. The DCs can help. They might eat them then.

Dh has been veggie for years and I often make up sage and onion stuffing to which I add chopped dried apricots and whatever nuts I have to hand. Then slice like a loaf. It works well with vegetarian gravy or cranberry sauce.
