Dahl - how do you make it? What do you eat it with?

Following on from another thread, I saw a couple of people mention Dahl as a cheap meal

I have lentils, butternut squash and loads of spices

So what is your recipe? And what do you eat it with?

I make the Hairy Dieters recipe which is red lentils and sweet potato in my instant pot and serve with yoghurt, lime pickle and rice.

I like this one. I serve with rice or naan or a filet of salmon.

Rice or flatbread
I fry onions, garlic and spices in oil or butter then add lentils and coat well
Then I add stock and simmer until the lentils are soft. I’m not a squash fan but you can add most things, I tend to use spinach .
I often fry some more onions until crispy with mustard seeds and pop on top to serve

I cook the lentils in some stock, add coconut milk and spices, always plenty of turmeric them cumin, ginger, coriander, Garam masala and some chilli then cook it down. I don’t tend to add veg, but sometimes might.
I tend to eat it either just with a wrap or make a ‘bread’ from equal parts gram flour and water, cooked by frying on each side fir a few minutes.

Madhur Jaffrey Goan style Dahl curry. It's amazing. I'd serve with rice or naan but mostly I make huge batches of it for lunch over a few days and eat it by itself like a soup. I make it in my instant pot which cuts down the time a lot.

I’ve lost count of how many times I’ve made this one. Batch cooks and freezes well. We have it with rice or naan usually, sometimes topped up with bought samosa and bhajis etc to make it more like a Saturday night. You could roast your squash and stir that through at the end.

This recipe is lovely. Very quick and easy. I add spinach sometimes. It would be nice with spiced, roasted squash too.

I use this recipe. During lockdown Monica was doing cook alongs on Facebook and every recipe I tried worked so well, including this dal. I usually serve with rice or parathas.

Usually eat with rice, but two ingredient flatbread with nigella seeds goes well too (equal volume flour and yogurt, knead to a dough, roll or pat out and fry a minute or so on each side).

Can also thin with water/ stock for soup.

1 cup red lentils
2 cups water

1 tsp salt
2 tsp cumin powder
2 tsp red Chili powder
1/2 tsp turmeric powder
1/4 tsp garam masala
2 or 3 cloves of garlic
2 or 3 tbsp of oil (I personally prefer olive oil)
1 green Chili
Coriander

Put the lentils to boil and add the spices and green Chili cut in two
Once almost cooked add coriander and boiling water till you reach prefer consistency

Fry the garlic separately and add the oil into the dhaal once cooked

I use this recipe for a simple dhal from posh Indian restaurant Gymkhana. I like to add lots of fresher coriander and serve with basmati rice or garlic naan or pitta, or sometimes I use it as a sauce for biriyani.

Oh and I marinate chicken in tikka paste and have that with it usually.

I like this recipe www.bbcgoodfood.com/recipes/spinach-sweet-potato-lentil-dhal but go slightly easier on the turmeric (and that stuff stains like anything, beware)

I make this one a LOT www.cookt.co.uk/nishakatona/recipe/temple-dahl But I also put in about 7-10 (no exaggeration) garlic cloves, as I love tarka dahl.

I serve it initially as a side dish to a curry, onion bhajis, roti etc but because I make a vat each time, I also freeze big portions and DH has it at lunch at work with rice bag or a I'll WFH and dip bread in it - whatever we have really,

1/2 cup lentils (red lentils are my favourite)..wash them add some cumin seeds, salt, red chilli powder (very less) and some tomato paste or cherry tomatoes. Just simmer for 10-15 mins..i serve it with rice usually because of its thin consistency. Fry some onions until brown, sliced garlic, whole red chillies/green chillies in some oil and pour that over the daal.

There's also lentil soup recipe where you combine 2-3 different types of lentils and add salt and let them simmer and then just hand blend them to turn into a thick soup like consistency. Tastes nice.. garnished with fried onions and chopped green chillies and coriander..

I love dhal, usually make with with coconut milk, red lentils and whatever we've got kicking around. There's an amazing ottolenghi recipe with stuffed aubergine in coconut dhal but that probably makes it much more expensive!

Usually eat with rice but dhal and chips is awesome. Or even better, half and half Smile
