Comforting meals with side of frozen veg

Just recently discovered frozen veg BlushGrin

Tell me your meal ideas!

I'll start - chicken mushroom leek pie with side of sweet corn and broccoli

I also use frozen garlic, and also tesco do a frozen Indian mix which is garlic, onion, ginger and chilli.

Cook the cabbage in a pan with a knob of butter and the lid on to wilt it, then stir it through buttery mash for a delicious colcannon.

Defrost spinach and frozen green beans and peas by pouring boiling water over them in a sieve, then add to the base of a fish pie with the fish, eggs and sauce under the potato. Then you won't need anything on the side.

Frozen okra makes a great curry.

Frozen chopped onions are a dream! I use them with some frozen butternut and frozen sweet potato ,plus a “real” carrot or two in my soup maker with stock and chilli flakes . The only thing I have to do is roughly chop the carrot.

Agree frozen mash is great, I look out for it on the reduced shelves, I usually portion it into freezer bags then it’s there in the freezer for pie toppings, fish cakes, or as a veg.

My 2 year old loves frozen sliced carrots. In fact loves isn’t a strong enough word. It is his favourite part of a Sunday dinner and a way to get her to try other foods.

I love that mix.

I also use lots of frozen herbs and spices as well as onion and garlic. It's not right for some recipes but fine for curries etc. It saves so much waste.

I'll need to retry butternut squash as the one I tried (Asda I think) had skin on and wasn't tasty at all. You've just reminded me my mum has an unused soup maker so will try that!

We always have frozen peppers and onions as they're so easy as bases for everything, pasta dishes, stews, soups, chilli etc.
Also can't beat frozen peas or Broad beans. Prefer tinned spinach and sweetcorn to frozen but don't know why I'm just sure I can taste the differenceHmm.
Also always have a cheap bag of mixed veg to throw into any of the above.
Butternut squash also handy. Have now found frozen avocados in Costco which are brilliant as I just defrost in fridge overnight and ready for breakfast, no worries about perfect ripeness.
Don't like frozen sprouts, broccoli or carrots though.
Have you moved into frozen fruit too? We love frozen mango for smoothies.

We have a side of peas with every meal. I love mine with broad beans, butter and a tiny bit of fresh mint but the kids prefer as they are, mixed in with cheese sauce, or covered in ketchup

My favourite it the moment is to just do a load of frozen veg put into a glass dish. Cover in cheese sauce (sometimes homemade, other times form a jar), top with breadcrumbs, grated cheese and some times a couple of tomato slices or some bacon bits on top too. Served with roast potatoes it's delicious.

Add chicken breast and lots of Frozen spinach in the Lloyd grossman balti sauce - very tasty midweek meal for us!
Shepherds pie with lots of frozen mixed veg added in with the mince- can also use frozen mash on top or frozen carrot and swede mash is nice too.
Frozen peppers and onions mix is nice enough in chicken fajitas.
And I absolutely love frozen Mediterranean vegetable mix (courgettes, red onions etc) cooked in the oven as an easy side dish with chicken or fish.

Frozen red cabbage with apple is surprisingly nice, you just microwave it. Not sure if they do that in the UK though.

I always have packets of frozen onions, peppers, butternut squash, spinach and green beans, as well as cherries, raspberries and blueberries.

Brilliant for quick dinners, soups, fruit great for porridge and pancakes.

Most of those would come wrapped in plastic when fresh, they're not going to moulder so less wastage, and you actually get more so less packaging used.

(Now waiting to be told freezer packaging uniquely terrible or something)

Thanks for the avocado tip will look out for them! No not got into fruit yet apart from mixed berries for smoothie which I've not had for a while..

The frozen corn on the cobs are surprisingly good, DS loves them! Also frozen berries are great in porridge, and much cheaper (they taste far too bitter on their own for me though). I tend to add some form of frozen veg to every meal.

Excellent to bung in to soups and curries. Hardly any taste, fall to bits if cooked long enough so useful bulk and veg content that the DC don't really notice.

Tesco's do frozen mixed mushrooms which are great too

I pop them in a spinach and paneer sag curry

Frozen broccoli great for Stilton and broccoli soup. Fry an onion, add bag of frozen broccoli, add stock, when cooked stir in some Stilton or any cheese. Very good.

If just having the frozen veg as a side, I pop into a pyrex bowl and cook in the microwave. As you don't have to add water, they are much less watery than if you boil in a pan.
