Please give me your tastiest recipes for stuffed marrow

I have a narrow which was grown by our neighbour & I'd like to make something amazing with it.

I've never made a stuffed marrow dish before but I suspect it needs something v punchy flavour wise?

We don't like lamb but open to all other suggestions apart from that...

I'm sorry, a 'tasty' recipe for stuffed marrow just doesn't exist. It's vile.

Is it unsalvagable ? Seems awful to throw it away though.

I slice mine right down the middle and scoop out all the seeds. Then I wrap foil around one end tightly and then fill it up with chilli con carne. Completely cover it all in foil and bake in the over for 40 mins. I do this with real creamy mashed potatoes. Oh yummy!

I do a sort of turkey mince with cheese on top and Tabasco. I really like it!

The best thing you can do with a marrow is add it to the compost IMO. There is nothing delicious about a marrow.

I haven't had one for ages but I quite like it with some Paxo stuffing in it cut in slices and serve with roast potatoes, apple sauce and vegetables.

A bit like @Unreasonabubble version but I use Bolognese sauce, lots of cheese & breadcrumbs on top and under the grill at the end to crisp/brown the topping. I love it Dc less so

Cut in half and scoop out the seeds - I don't bother peeling as usually the skin is thin but you can if it seems tough
Grate the whole thing in the food processor (or on a box grater)
Grate the same amount of potato so you have 1/2 marrow 1/2 potato
Heap all the grated veg together in a colander and sprinkle with salt, leave for 30 mins
Grate an onion in the food processor you just used for the veg
Squeeze out all the water
Mix the grated veg with some grated onion, eggs, flour, seasoning to make fritter batter (good rule of thumb: for every 500g of grated veg you had in the colander, you should add ¼ of a medium onion (grated), 2 large eggs, 2 teaspoons salt and ¼ cup flour)
Heat veg oil in a pan
Dollop and fry on both sides till crispy
Serve with sour cream, smoked salmon, apple sauce, sweet chili sauce, whatever you fancy

If your marrow is huge and you have loads, these freeze brilliantly and you can reheat in the toaster, or on a sheet in the oven!

It doesn't have to be stuffed.
I love it peeled, seeded, cut into chunks - then fried in butter and finished with garlic and black pepper.

I fry up mushrooms , onions , mince (or quorn mince) with a some chilli flakes and and pesto or bol sauce. Tons of cheese on top and bung in the oven for half an hour.. I either hollow it out boat style first or slice into rings.

I don't eat the skin, I use it to "hold" it altogether, so basically my waste is just the skin.

I do it with a veggie Bolognese too and tons of cheese on top. Otherwise soup is the obvious option for me. Yum!

Bit of an oxymoron, OP.
I've tried countless recipes for marrow and I've never had one I could describe as 'tasty'.
The most apt description, for the better recipes, is inoffensive.
DH grows lots of vegetables but he no longer gives over any space to marrow, thank god. But occasionally he finds an hidden courgette that has almost reached marrow proportions.
On those occasions it goes into chutney, piccalilli or courgette cake.

Sorry OP. I agree with the others that the best recipe for "tasty" marrow involves a bin or a compost heap.

Just do it discreetly then tell lovely neighbour it was delicious.

I just chop it up, skin, seeds and all, and roast it with tomatoes, garlic, onion etc. I find it really tasty that way.

I peel them, dice them and then add them to soups. Makes it nice and thick, and doesn't make it green

Ooh I loved stuffed marrow! It’s one of my absolute favourites. But I was going to say lamb! Spiced in a Moroccan or moussaka way.

I would try chilli, or a spicy cottage pie with lots of pepper and swede. Like a Cornish pastie filling.

If it’s not too old and dry then the skin is nice to eat

I once made marrow and rhubarb jam and offered some to my mum, who was in her late teens and early 20s in the WAAF during WW2. She exclaimed in horror that it was vile stuff and once sugar rationing ended she swore she'd never eat it again.

However, she did make a lovely stuffed marrow recipe with sort of bolognese sauce and a pound of cheese on top. Not very wartime rationing.

Make a delicious rich ragu, throw in some red wine for extra yum.

Throw marrow away, serve ragu on fresh pasta with grated parm.

You'll thank me.
