I've noticed in a lot of email correspondence that the writer will put her/she after their name

Is this really a thing now? For one, if I was writing an email to an individual I would just say Hi Perfect, I got your email ... I wouldn't be saying her/she him/he. I honestly think the world has gone a bit mad if companies are making people put this at the end of emails.

Yes I have to.

I have to state Pronoun: she/her on my email signature as does everyone else in the company.

I don’t think any UK company can legally force employees to state pronouns, under equality legislation.
It is “outing” to force trans people to state theirs before they are ready to do so, and it leads to sex discrimination against women, by identifying them as female, when they prefer to use initials and surname in order to be respected by misogynist clients or managers.
And since the Forstatter judgment, being gender critical - ie not believing in gender identity ideology and the whole pronoun nonsense - is a legally protected belief. You cannot be made to subscribe to it by using gendered pronouns.
I would simply not put any pronouns on your emails. If challenged, take it to HR and point them at the relevant legislation.

Babdoc gives excellent advice.

Putting pronouns in your sig is regressive nonsense that makes a workplace more hostile to women. It's the very opposite of inclusive.
