Lunch Rut

I take lunch to work with me and am stuck in a rut. I batch cook a homemade vegetable soup with garlic and chilli and freeze portions, then have it with a bread roll. Or I make a prawn salad wrap which is quite quick and easy to make 2 at a time and stick in the fridge.

I need some new ideas! Criteria are nutritious (good opportunity to pack veggies in) and quick and easy to make in advance, or at least can be batch prepped on a weekend so easy mid-week.

What are you taking to work for your lunch??

I never used to have pitta bread unless it was for dipping because I found them so darn hard to stuff but now I get these which are much better www.tesco.com/groceries/en-GB/products/308486863 I’ve been taking them stuffed with humous and lots of salad.
This noodle salad is yummy and sometimes I make it on a Sunday evening if we have leftover roast chicken.
This couscous and feta salad is really quick and keeps in the fridge for a few days.

I tend to eat it the next day but I think it would be fine in the fridge for a few days.

If you have access to boiling water and have the time then home made pot noodles www.rivercottage.net/recipes/diy-pot-noodlesot you could make at home and pop in a wide necked flask.

Hummus, falafels, carrots, leaves, bit of onion, gherkin, cucumber and pitta is one of my favourites.

I think Morrisons do the best supermarket pittas.

Frittata with potatoes & vegetables

Pasta salad with mushrooms & cheese cubed, or tomatoes & mozzarella balls.

Chicken Caesar salad with leftover chicken

I like cous-cous with vegetables & smoked mackerel fillets

Chilli salad with chicken.
2 boiled eggs with vegetable sticks and hummus.
Omelette with asparagus, tomatoes, onions and cheese.

Salmon fillets with sweet chilli sauce (ready cooked) on a bed of spinach or salad, bung in a few cherry tomatoes and some cucumber. Lots of protein, very filling. A couple of clementines, some fruit juice. About 4 of "5 a day".
Variations on salmon could be cooked chicken, roast beef, ham etc
