Vegetable side dish inspiration

We're trying to eat more veg but feel like we eat the same things over and over. Examples of things we have as side... Ribbons of carrot & courgette, mushrooms & leeks, oven roast sweet pots & butternut squash and the usual steamed carrots & brocolli.

Any ideas would be great. TIA

OP, @UtterlyUnimaginativeUsername wasn’t being rude at all, they were saying that they are at a loss re: veggie sides too.

You, on the other hand, are just plain narky.

You’re the one who’s being a bit rude...those comments were not negative! One said that they feature vegetables within the main meal which actually is a perfectly viable option to solve the problem of not knowing what to make for sides, and the other was just saying they’re in the same boat as you. Hardly crimes of the century and your response was frankly quite ridiculous.

Hence I no longer feel inclined to offer my suggestions.

You can have lentils with leek. Just cook the leek with the lentils in a bit of veggie stock. Add some mustard and cream and season to taste.

Or baked cauliflower on a bed of mushrooms... mushrooms are seasoned with curry powder and a dash of cream.

These are always a winner and go well with new potatoes and any type of meat or fish.
Or just leave the meat/ fish and have it veggie! 😋
