Healthy not heavy veggie meals?

I'm looking for inspiration please, have no imagination atm. Keep doing things like lentil bolognese/lasagne type dishes with salad, pesto pasta. It's all types of pasta or it's veg/tofu stirfry or baked potato with a range of fillings.

Any other good ideas? Can't think much atm! Have a toddler and we're all coming out of a cold.

Five vegetable tagine? It's this recipe, but I cut everything up smaller and often transfer it to a casserole/slow cooker after adding the tomatoes so you don't have to watch it drying out so much. Serve with couscous.

Crustless quiche/frittata

I'm veggie - so I'll just lsit what we've had for meals in the last couple of weeks and you can see if any appeal Smile
Savoury pancakes (pancakes stuffed with spinach in a cheesy sauce, I also do sweetcorn and mushroom one - make a thick mushroom sauce add sweetcorn and fill pancakes.)
Vegetable curry +rice
vegetable cobbler
butternut squash and carrot soup
tofu stir fry
I do buddha bowls fairly often - I use spiralized or chopped raw veg (so carrot, beetroot, cauliflower, mushroom, salad veg etc) a grain - quinoa/cous cous/ bulgar wheat/ or a mixture, a protein - lentil (I tend to use puy lentils for salads as they have a bit more flavour) or halloumi (make sure you get veggie halloumi), baked tofu slices, eggs etc. You can use whatever you like and vary it up.
Frittata - I just use any veg I happen to have give it a quick steam, mix in with eggs and lots of herb and bake in the oven.
Toad in the hole using veggie sausages (richmond are our favourites) - not especially light but I tend to use a half quantity of batter, and do a load of veggies with it.
Nut roast - I use cashews and I put quite a lot of grated veg (usually butternut squash, sweet potato, carrot) to keep it moist mix with breadccrumbs and an egg and herbs and bake in loaf tin. You could form the mix into patties and bake in the oven if you wanted cutlets.

Dahl and rice? Nothing authentic about my Dahl and I add blocks of frozen spinach and/or cherry toms into it.

I make a lot of rice or noodle things. So tofu stir fry is regular (I get tofusperstion from Pinterest - I will marinade, bake and freeze then cook from frozen. It changes the texture a lot).

This week has been falafel pitta and Greek salad.

Chick pea based curries - look up chana masala recipes, you can change them up as you like with different spices and vegetables.
