Weekly lunch prep

Well I’m going to start this school year with good intentions and do some lunch prep on a Sunday which will hopefully carry me through to at least Wednesday… I’m a bit wary of preparing food too much in advance, I reckon by a Friday the prepared food might not be so nice?
Anyway, so far I’m planning on making sesame soy sticky chicken and maybe some broccoli (might change that to just spinach leaves), possibly served with rice. For the end of the week dd has requested smoked salmon and cream cheese pinwheels (wraps really, she can cut hers if she wants).
We’ve got bento boxes from last year and we had fits and starts of being prepared but we mainly used them for sandwiches and crisps and fruit Grin
However I prefer a proper meal at lunchtime as I go to the gym after work and with everything else I often don’t eat dinner til late and I prefer something lighter and quick (although dh does most of the cooking so it’s just whatever he makes).
So, are you a lunch prep type person? If so, what would you cook to take?
Last year we did things like orzo pasta salads, tabbouleh, tuna Mayo wraps, usually with crudités.
I don’t like hummus or pesto but dd does!

Oh thanks, some lovely ideas.
We are both at nut free schools Grin
I love a couscous salad but I tend to use the giant couscous for a chewier texture and then add a load of roasted veg and a tangy dressing.
Thanks for the ideas, I’m going to get her on the case too, she loves cooking which helps.

And obviously I know pesto has nuts, she doesn’t take it to school but lots of recipes I find have got pesto in which I hate!!

I make 5 portions of soup (I have a soup maker) and out 2 in freezer and freeze 3. Take 3 out and put in fridge weds am.

I heat and put in thermos.

I also make my own versions of breakfast muffins (basically quiche with no crust!)

I take a tub with fruit in and mix yoghurt in with it.

I cook chicken and again freeze what I don't need and put in fridge each week.

I often do sweet chilli chicken and then have a little bit of cheese, beetroot, coleslaw or whatever veg sticks with it.

If I don't have the soup for lunch I have it for dinner so I use a portion a day.

I find with things like the breakfast muffins I can make 20 ish at a time and so it's 3 weeks worth.

Soup I weekly but prep is 5 minutes and then it's simply pressing go and pouring!

But then again I always have good intentions to be healthy and organised at the start of the academic year Grin

@itsgettingwierd Thanks, I’m going to try the breakfast crustless muffin things, are they basically egg and things in a muffin tray?
I do sometimes make soup but it’s the kind of thing I find really boring and depressing to eat - I need to be able to chew things and I don’t like chunky soups with solid bits of food bobbing about in liquid so while I find it okay in a pinch I definitely wouldn’t look forward to or prioritise time for my lunch!!

Yes they are basically quiche with no pastry!

Mine are literally egg, milk, cheese, ham and red pepper!

The muffins have approx 1 egg in each so are great for protein and filling.
