Please help with hiding veg!

I have a much loved relative in poor health. They have spent many years caring their father who favoured post-war style cooking.

As a result, my much loved relative has a poor diet. Their depression, which is pretty bad, means they're inclined to comfort and processed foods. They have little inclination to cook and prepare meals.

So, my cousin and I have teamed up to stock up their freezer with healthy meals that not only will they eat and enjoy, but also won't be suspicious of!

We're trying to come up with meals we can batch cook and hide lots of nutrition in :)

My lovely relative dislikes pretty much all veg except potato, carrots and peas.

So I'm hoping to pick your brains for your best /hidden/ veg recipes please?

They enjoy fruit and pulses. Tomatoes always go down well. They're like mild spice only.

Don't think they like mushrooms as never seen them eat one Hmm

Can you please help with sneaky veg recipes for picky eaters? 🙏

Fry mushroom, garlic l, salt and ground pepper for a 'steak' sauce.

Cashews can be soaked and whizzed for healthy fats.

Nutritional yeast is a good way to sneak vitamins in, you can use it in a cheese sauce with mustard instead of extra cheese. It can also be used as a 'nutty' flavour in other recipes.

Shepherds pie is great as you can grate courgette and carrot, blend tomatoes and onions into the sauce and mashed swede in with the potatoes.

Chicken korma with finally chopped squash.

You could make a vegan chilli- either five bean or with lentils instead of the mince.

I always, always blend a couple of red peppers into it if I am on a sneaky veg mission. You can pretty much do this with any tomato based sauce if you use the longer peppers as they are sweeter.

You could make some nice snacks/ desserts too. Banana bread, apple cake, crumbles with oats and nuts in the topping. You could add ground flax seeds to all of these which is good for fibre and I think possibly omega 3 too.
Oh yes - if there are no allergies- ground almonds work well also. DS likes nutella on oast for breakfast and I mix the nutella with ground almonds. I used to also mix butter with avocado as a spread in sandwiches until DS got wise to it.

Have you a slow cooker? Bung loads of veg in there (anything, sweet potato, aubergine, carrots, peppers, parsnips etc) with loads of passata or can tomatoes, bit of veg stock, balsamic vinegar and a tablespoon of sugar and tablespoon mixed herbs. Cook till soft then blend for a pasta sauce. We also use it as the sauce when making home made pizza too, or mix with gnocchi, bacon and mozzarella. It freezes well

Also grated courgette in choc chip cookies is great, and beetroot chocolate cake.
