Duck eggs!

DH accidentally bought duck eggs! I've had them before hard boiled, but in some realms of the internet I can see warnings about them carrying salmonella. They don't do they? Hmm I can also see a load of sites offering different timings for soft boiled, which is what I'd like to do with them for breakfast.

Please tell me how long I should be boiling them for and if they're safe! Grin With hens eggs I usually do 4 mins from being popped into a pan of already boiling water.

Please help save my Sunday morning breakfast. It's 5.30am and DS hasn't slept. I'm about to get my head down for a bit now he's nodded off, and I really want a nice breakfast!

It would never cross my mind re salmonella, I just treat them like chicken eggs. We usually have them fried with very runny yolks and we are still alive Grin

Are they lion stamped, because if they are they are vaccinated against salmonella, if not there is a risk but then there is a risk with unstamped hens eggs. Only way to be sure is to buy lion or hardboil, but risk is low.

Regards soft boiling it's just dependant on the size, I've always guessed and treat duck eggs the same as hens, but there must be a calculation

Duck eggs make fantastic cakes and meringue. Really, really good.

I was never one for them boiled but perhaps that’s just me.

@BillyBearSpam I'm probably overthinking. Too little sleep and hungry belly! Ooo, we have six, so I think I'll treat myself to fried egg sarnies tomorrow. Sounds delicious!

@Newfluff They're not lion stamped, he got them from a local farmer's market. He has a stomach of steel whereas I'm more of the delicate disposition! Think I'll risk it though. Woke up two hours ago starving, then spent ages making sure poor DS was fed and well. Two sets of teeth in a month, poor lad.

@TheSandgroper They're much more rich tasting, if I remember correctly, aren't they? Hope I like them. I've only got vague memories of the biggest hard boiled egg I've ever seen. Grin

I shall keep that in mind for seasonal baking, though!

I can’t remember the last time I bought stamped eggs. Gotta be over 20 years ago and ive never thought if salmonella.

No I don't either but there is a risk with all unstamped eggs, but one I'm willing to take .

Decent eggs, whether hen or duck, are so much nicer than supermarket eggs. Enjoy your breakfast

Thanks all! Eggs were made and they were indeed bloody glorious. 6 mins had them perfectly runny, and in not ashamed to say that I even cut my toast into soldiers, and used a Peter Rabbit egg cup. Grin

Duck eggs are great, very tasty. Goose eggs may be what you're thinking of with the huge size? They're great too but take a lot more cooking!

It's very possible, the one I remember eating was far bigger than the duck eggs I had today, which are just look like extra large hens eggs, albeit with a whiter shell. Hmm! Either way, I'm now definitely a fan. Have made DH a cuppa to make up for grousing at his mistake in my sleep deprived state. Grin
