Best way for a single, middle aged woman to have a holiday?

I quite like an organised trip. I came to them late, previously believing that independent travel was more "worthy" but actually, a guide adds to a holiday enormously IME.

We did some fantastic family adventure holidays with Explore and Exodus when DC were teens. A great balance of sociable and organised activities, but also time to yourself. It was good to have someone to explain what you're looking at when sightseeing and also a planned itinerary, so someone else has dealt with the "what shall we do today?" conversation.

Since DC are adults and DH died, I've done some group walking holidays, but in my 50s I'm usually the youngest there by about 20 years! It's OK but I wonder if there's a better way?

It doesn't need to be a singles holiday, probably better if it's not, but I don't really want to be the oldest in a holiday aimed at youngsters or the only working person on a holiday full of pensioners.

What's a good option? Any recommended companies? Any experience of Explore or Exodus holidays for adults?

I like an active holiday and some things to learn/see more than a beach holiday.

If you want to see puffins in Northumberland, there's boats going on day trips to the Farnes from Seahouses, is this the sort of thing you're looking for?

You can book direct with the boats (I've used one of these for scuba diving with seals in the area, but many of the boats also do birdwatching trips too and they're out most days weather permitting)

Not sure about the Fat Biking, but we've done group holidays direct with the providers, eg mountain biking in Andalucian mountains, I'm sure there will be similar companies based in Finland that offer cold and snowy mountain biking instead of the warm sunny version.

Maybe try a local company rather than UK tour operators? Google suggests:

www.lapland.fi/visit/plan-your-stay/finland-summer-biking-fatbiking/

I know the last one says summer, but there's some links in the article that might be able to help as I think that's the Finnish Lapland tourist body.

I've also been on group diving holidays both with DP and on my own and there's always a mix of ages, from teens to 60/70 and as a 40-something, I've never felt out of place. We either go with a trip organised by a UK dive shop or find a local shop in a place we want to go, who take people out for dives for a few days.
