I made a bolognese this morning and had an aubergine that needed using so roasted it then blended it up with the tomatoes. It added a lovely richness to the sauce.

For bolognaise always roast the veg with garlic first.

I usually put a spoonful of hotchocolate powder in tomatoe based sauces too

I keep parmesan rinds and throw them into bolognese while it’s simmering for extra umami (remove before serving obviously).

It's not an ingredient, it's the process: properly browned mince, slowly caramelised sofrito base and cook for an absolute minimum of 90mins.

I made bolognaise for lasagna the other day and grated a whole courgette i got from my neighbour, no one likes it grates well along with a carrot!

A sprinkle of coffeemate if anything with tomato is too tangy - takes the edge off and adds some creaminess Grin

My best spag bol tip is to use beef shin or ox cheek rather than mince. Costs about the same (maybe slightly more expensive) but creates a far more sumptuous ragu.

*means it takes 4 hrs to cook rather then being a half hour thing but it's so worth it.
