Induction hobs over gas

Love my gas but like the look of those flat ones. Are they all the same? Are they good? What’s the deal with pans. Are they ok for stir fry?

You need pans that are ok for induction hobs. You can stirfry but in a wok with a flat bottom suitable for induction hobs.
Husband does all the cooking and was reluctant to get rid of his gas hob, but now loves the induction and doesn’t regret purchasing it.

We have stainless steel pans which we bought back in about 1995 from Habitat and thankfully they are compatible with induction.
Look on the bottom of your pans it should say

You need pans that are compatible.

Stir fry is fine.

I find it as responsive as gas but so much easier to keep looking clean. I use the Ikea 365 stainless steel pans and circulon frying pans. It's not great at stirfry as the heat can't go up the sides of the wok - I do cook stirfrys but they are probably not cooked authentically, they are ok for me! I've worked in houses where they've had an induction hob and a single gas burner alongside for things like woks.

Induction's good but sometimes we have problems with the computer! If it senses nothing on the hob it shuts down the ring, so just because it's slightly misaligned it might refuse to heat it. Also put anything on the cooking surface that isn't a pan, and it beeps angrily at you. Gas just seems simpler at times!

I love mine so much. I'll never go back to gas. Much more responsive, can simmer on lower temps, easier to clean. Wonderful.

I also moved from gas to induction 4 years ago and wouldn't move back.

We had to replace our pots but they were from 1992 and I think induction wasn't a thing then.

One word of warning: the hob is a glass plate. I smashed the first one when a glass jar with herbs I kept above the hob fell down. One new hob and replacing every single glass jar/container around the hob with plastic.

I have an induction hob and would never, ever go back to a gas hob. It is so easy to keep clean, literally 2 minutes a day maximum. The heat is very controllable.

I was sceptical when we moved and new house had induction but I wouldn’t go back now

Induction every time, in a word CLEAN!
Aluminium in the pan base will not work. All stainless Steel should work.
Although Le Cruset do work, I’m wary because they could smash the glass if dropped.

I love my parents' induction hob, even though I'd previously said I'd always buy gas (which we have at home). The only thing is, do your research before buying, there's a spectrum of quality. Some make a v weird noise and don't have a proper reduced/low setting, it just goes on intermittent which isn't great.

I have a Bosch and it's excellent. Can heat a pan of water so fast with the fast boil action, gas seems so slow compared to it. I have Stellar pans and Scoville non stick frying pans .

Yes - induction works using electromagnetics. If the pan isn't sensed by the hob, the hot plate just won't heat it. I love our induction range. So easy to keep clean compared with the gas hob we had before and easily as controllable. You can put kitchen roll between a pan and the hob and only the pan gets hot.

We switched to induction last time the cooker needed replacing. It’s fab! Had to buy a flat wok. The kids are much happier using this over the old gas hob - understandably the flames made them nervous.

Just test any saucepans with a magnet to check they are compatible.

You want a model with a booster function on each ring. We got a hob top kettle as it boils as rapidly as a rapid kettle.
