Muffins - what flavour this weekend?

I make muffins most Sundays, as I have the oven on and it's the only time I really 'bake'. It's my 'happy place'! Grin

My go-to is banana, as I usually have bananas in the freezer - only DS2 eats them but only at 'peak ripeness' for him, which means that i put over-ripe in the freezer; they are ideal for muffins. Mis it up with nuts/choc chips or both.

BUT - I have no bananas! I made chocolate with choc chip last weekend. I've previously done orange, carrot/cinnamon, apple, pineapple...

I have cherries in the freezer, and also a bag of mixed berries. I have a tin of pineapple. I have apples, and carrots. I have cooking chocolate bars and coffee - no cocoa powder tho. I have all the spices and stuff, inc ginger in the freezer.

What's your favourite? I can always pop to waitrose later if something piques me! Gotta be sweet tho, Bran, herb or cheese is not going to go well with custard Grin

(Glace) cherry and almond - replace a portion of the flour with ground almonds. I'm sure it would be ok with frozen cherries, especially if you are planning on eating fresh from the oven.

Oh now I have just found a Lemon and sour cream recipe which looks great!

Prob with raspberry and white choc is that I would have to pick out the raspberries from the bag of mixed berries (and I would eat all the muffins Grin)

Forgot to mention I also have Nutella, which I've spooned inside muffins before (although it doesn't really melt?)

Apple and carrot grated in make a nice muffin and not dry. With raisins if you have and spices that would be yum.

hmm, HappyCamper, I've done carrot-cake muffins with cinnamon before and really like that, also apple and cinnamon, and apple and raisin is a favourite, so all 3 (or 4) together sounds like something I'd eat too many of Grin

The cherry sounds good too, I'd have to get almonds...

Lemon and poppy seed with a core of sharp lemon curd.

I also love raspberry and white chocolate.

I think I might try the lemon and sour cream I spotted online, if I don't feel like it tomorrow I go with raspberry and white chocolate. Will have to get white chocolate tho. Or sour cream - i'll have to get ingredients for all of these so far.

Or I might just go with coffee. Can I put raisins in that?

Anyone tried a jam-centre muffin? Got loads of jam. Presumably a plain vanilla muffin, with like strawberry/raspberry jam? I suppose it would be like the lemon curd centre.

Carrot and Pineapple. Sounds bizarre, but surprisingly moist and delicious.

So - I know it's been a few weeks, but thought I'd update...

The Lemon and Sour Cream I found online is a huge hit! I've amended it to only make 16 portions (!) but they are light, fluffy and lemony.

I made them with Lemon and Yogurt last week,and they were fab, and slightly less calorific Grin - I don't bother with the topping.
They've been requested for the past 3 weeks running, and again for today Grin
Recipe here

Fish pie for main, and apple/blackberry crumble for dessert, Lemon muffins for additional dessert and snacks in the week.

The best ones I’ve ever made are white chocolate and coconut, will have to dig out the recipe.

Oooh white chocolate and coconut sounds fab! Anything with coconut is a hit in my book Grin

Only thing about using the yoghurt (I use full fat) is that they don't rise as well as with the sour cream, I don't know why. The eggs are whisked, the oil and sugar are whisked, it's a lot more whisking than I usually do with muffins. The batter is light and foamy, but they still come out a bit - flat.Still lovely and light and moist, but flat.

Sorry I’m useless! Here’s the recipe. DH is in the doghouse for using my recipe book and then leaving a pack of butter on it so it’s all greasy! Hope you can decipher my atrocious handwriting!

Ooo these look delicious. Definitely want to try those lemon muffins. I enjoy strawberry and coconut muffins, choc chip, blueberry and apple and cinnamon.

These all sound delicious and I love the idea of making it a ritual each weekend. I am gluten free and struggle to get good muffins. If i find a basic recipe then I can do it easily and adapt with flavours.

I'm kind of like that with soup. Mondays are soup making day and I'm usually in my happy place with a stove full of soups ready to freeze.

But I like the idea of adding muffin making to my happy place. Especially as we like breakfast cake at the weekends .

Sounds a bit odd but strawberry and beetroot.
Carrot and apple is nice too.
Blueberry or raspberry are my go to though mainly because I normally have them in the house!
What about savoury muffins? Cheese and herb...

Thanks all - I was all out of ideas this weekend and went with basic double chocolate! Grin I did also make a spiced apple and blackberry cake with fruit form the garden tho.

Thanks prettybubbles - I can' read (most of) that! Looks good and I've got ds2 coming next weekend so might give them a go.

Breathmiller - my DP is gluten intolerant (bloating) so I go low-gluten; I use 1/3 normal flour, 1/3 gluten free and 1/3 oats in any cake recipe I make. Seems to help. The Freee GF flour (from Tesco) works pretty well. Most of them rise as normal - except the sour-cream and lemon ones, which come out more like fairy-cakes Shock I expect I am adjusting the proportions not quite right.

260g sr flour
200g white choc chips
40g desiccated coconut
150g caster sugar
1 egg
240ml milk
1 tsp vanilla essence
45gish butter (melted)
100g melted white chocolate (optional for decorating)

Combine flour, coconut, white choc, sugar. Beat egg add to milk, add butter and vanilla essence. Spoon into muffin cases and bake at gas mark 8 for 5 minutes then gas 6 (5 if your oven runs hot) for 15 mins. Allow to cool completely and then drizzle with melted white choc (optional).

I was given some raspberries last weekend by a neighbour, so I made Raspberry and White Choc for my boys when they came home for a BBQ. They are a new top-runner! I love raspberries, think they are my favourite.

(I also made an apple and blackberry crumble with more free fruit - from my own garden Grin) I love this time of year!
