I don’t know if I like mushrooms or not

Sometimes I fancy them but when I cook them they are all watery and tasteless. Does it depend on the mushroom?

Yes I think stewed is the word. I will fry them on a higher heat and try that.

They are just odd !
I sometimes enjoy them and often don’t.
Tonight I had king oyster mushrooms (god they are beautiful!) marinaded in Chinese soy and slices and roasted and then shredded and used as mock duck for duck pancakes. Absolutely great. A rare positive mushroom experience frankly.

Get the big ones and fill with boursin and chopped toms and spring onions.

Shitake ones fried in butter and garlic with eggs and toast. A good knob of butter mind!

Try making the Ottolenghi mushroom lasagne recipe. It's the most intensely mushroomy thing imaginable.

I make the first recipe in this article a lot .
It isn’t watery or lacking in flavour!

I fry them in oil or butter but they take ages to cook. The pan goes all watery and the mushrooms end up wrinkly.

You need to whack the heat up and stir fry them briskly, not stew them.

My theory is very low and low or very high and fast. Like meat it's the middle ground that kills them.

I think you'll find that your mistake was in assuming that mushrooms are edible.

I love them, but unfortunately am intolerant to them so rarely have them.
I agree with @MrsTerryPratchett that they need to be cooked v quick, or left raw or long and slow.

Butter and garlic are your friend! I use garlic paste (the tubes). And make sure they're browned on the outside! Bloody lovely.

Husband has a texture issue with mushrooms.

I'm the only one in my house who likes them so they're a lunchtime treat. Cooked in butter and served on toast. Awesome.
