Desserts for diabetics

I have a friend calling in for lunch in a couple of weeks. She is diabetic and I would like to offer a nice dessert that isn't fruit salad. Can anyone give me some recipe ideas please? Even better, are there any ready made dessert out there. I have looked online but can't see anything.

Definitely not grapes! They are the worst fruit for a BM rise as they have practically no fibre to slow it down.

My Type 2 mum was told to avoid them.

I also like the Diabetes UK recipes - they are great for a low carb dieter!

It really is best to speak to your friend because diabetes is a diverse spectrum and there’s a very real chance you’ll spend a lot of time and effort on something that isn’t suitable otherwise.

It sounds like your friend is most likely type two, but for some people (but not all) who use insulin complex/slow release carbohydrate can actually be harder to bolus for, so no-one here can give much specific advice.

I have type 1 diabetic siblings and I wouldn’t do anything special for them. They eat whatever and adjust their insulin accordingly. FIL is type 2 and more careful, but would still have a normal desert if out or at someone else’s for dinner, but everyone takes a different view of what is acceptable/ has differing control of blood sugars, so it’s really best to just ask her.

I’m Type 2 and I’d not have fruit salad!! I will have a few strawberries or raspberries with double cream though. Or often extra thick cream on its own! Greek yoghurt (not Greek-style though) with dark chocolate drops, some pecans and a spry of cinnamon is lovely. OH did make me a little egg custard type thing using some Stevia and that was divine!

Strawberries, greek yoghurt and shavings of 80% dark chocolate. All very low in carbs especially if the portion size is kept small.

I'm type 2 and diet controlled and I tend to make dark chocolate mousse, or a cheesecake made with ground almond for the base and sweetener

I've also made a rhubarb crumble with almond topping and served with cream

You could search keto desserts - there are loads out there. They are diabetic friendly as they will have minimal impact on blood glucose levels.

Not ever having had much to do with diabetes I hadn't realised it was so complex. I just wanted to surprise her with something different.

I'm T2 diet controlled, her comments sound strange to me. A fruit salad is full of sugar, it doesn't matter (as far as diabetes is concerned) that it's 'natural'.

T2's are all different in how they deal with their diabetes and what affects them.

I wouldn't go to any effort/expense without knowing more.

OR take a punt & make something you like that is presented just as dessert if she'd like some.

The MIST awful thing (IMO) is when someone tells you they've made xyz as is ok for diabetics/you so you feel you have to have some, even when you know it will affect you and if you're in ketosis, throw you out, which can take days to get sorted again

A fairly safe option is raspberries, double cream and a shaving of a dark chocolate ?(with about 5g per 100g of carbohydrate). Not all dark chocolate is low in carbs.

A lot of the things/links in previous posts I really wouldn't choose to eat (too high
In carbs for me).

What are you making/serving for lunch?

I'd do cheese board tbh. I am diet controlled (now, I've had to work hard to get off meds and stay off them)T2 and low carb so have it with celery, a few walnuts and thin apple slices ( not many cos of the sugar). I've found it gives me the treat feeling without being too bad. My other is nut based cheese cake ( I use erythritol) but a tiny slice. Or a tiny bit of plain v dark chocolate. Or a few berries and cream - berries are fairly low in sugar and seasonally abundant. While I think its lovely you'd like to treat her, I would genuinely ask her - as PP said it's awful when people say I've made you this because it's ok when everyone manages their intake differently and sometimes it's really not ok because of other things you've eaten or things going on.

This is fabulous - it's low carb, so suitable for people with any kind of diabetes, really REALLY easy and tastes fab. I add some ginger to the base and double the lemon.

I'm T2 and would never eat fruit salad! If I do eat something sweet, it's something like a few berries with double cream or greek yogurt. I can't abide the taste of sweetener and it plays havoc with my digestion, so to be honest most of the time I go for a cheese board instead with celery, some wholemeal crackers and a few chunks of cheese.

I'd ask her. You can't take a chance either way.

Just to add to the lemon cheesecake mentioned above - DD is type 1 diabetic, and we eat low-ish carb. However your friend manages her diabetes, you can't go far wrong with a low carb, low GI dessert. If she uses insulin she won't need much! Low carb also good for type 2.
If she has a more obscure type ... dunno!

Thing is my DM wouldn't eat any of the cream/cheese options either - the main way she's controlled her diabetes is by losing weight so a big cheese board or an icecream may be low in carbs, but it isn't low calorie either.

It's a minefield.
