Best "normal" vegetarian cookbook

Hello! Can anyone recommend me a vegetarian cookbook that I can use for standard weekday dinners? It's just me and 6yo at home, the child probably wont eat anything but I'm determined to try some recipes.

I shop at asda so need recipes with normal non specialist ingredients!

Maybe some good italian dishes?

I love The Hungry Student's Vegetarian Cookbook. Super easy, tasty, cheap recipes for every day, and they're pretty child-friendly too.

I don’t know if it’s still in print but I was given the Good Housekeeping Vegetarian cookbook about 25 years ago. Really easy recipes using everyday ingredients and includes a ‘young eats’ section which may appeal to your DS. It’s my main go to recipe book.

Rukmini Iyer’s The Green Roasting Tin is good. The recipes are pretty easy and low maintenance. You just stick it all in the oven together. Many of the recipes have specialist ingredients but the ones I have made from it have pretty standard ingredients.

I really like the Roasting Tin series. I am still on the Main cookbook, substituting veggie ingredients so I havent even had time yet to try the veggie version!!

I second this. The copy I've got is a newer edition, search on eBay and you can pick up second hand copies. Full of really delicious recipes that are easy enough to knock up on weeknights. My favourites from it are cauliflower and lentil curry with coconut milk, and this amazing creamy courgette and tomato bake with mini cheese scones on top.

I use it a lot and it’s pretty reliable. Lots of easy and fairly quick recipes made with easily available ingredients.

Fearne Cotton did a vegan book (Happy Vegan) with normal recipes that her kids apparently eat.
Bosh books are very good too.

You can just substitute many ingredients like mushrooms and lentils in a bolognese, bean chilli without mince, and so on.

Not a cookbook, but the bbc food website is really good, as are a lot of the supermarket recipe pages. My mum's been veggie for 40yrs & she's always finding new things to try/adapt. She doesn't bother with faffy ingredients either, I'm always nicking recipes off her Grin

I think if I could do 10 lovely dishes well I'd be grand. I did gousto and hello fresh which gave me a couple of ideas, but I've slipped back into nuggets, beans, eggs type meals that are typical uninspired teatime. I could still do them a couple of nights but would like to show my DC a more diverse menu for him to refuse

A really quick and easy recipe you can adapt is:
Packet of microwave rice (my DC like the Uncle Ben's spicy Mexican one, but younger DC might prefer the golden vegetable one). Cook that. Bung it in a bowl (takes two minutes)
Add... pretty much anything. Chopped peppers, cucumbers, cherry tomatoes, olives, cubed cheese, half a bag of salad leaves. Mix it all together. Done.

If I'm feeling wanky, I caramelise onions, and use balsamic vinegar, toast pine nuts, etc. etc. But as a basic meal, it's quick, easy, minimal washing up, and you can add whatever needs to be used up from the fridge. I think my mum got the original recipe from Waitrose

And last night for dinner, my teenagers had cheesy beans with naan bread. Some days you can be arsed to cook, and other days you cannot Grin

Lol at "if I'm feeling wanky" @sadeyedladyofthelowlandsea! I know exactly what you mean. I cant really sum up much enthusiasm for cooking, or all the shopping and washing up that come with it. But I feel like I'm letting down my kid a bit by defaulting to warm weetabix when I cant face it.

I've just recently bought some vegetarian/vegan cookbooks to try to encourage me to eat more veg.

5 ingredient vegan by Katy bestow is very good. I've made the enchiladas and the beer bread so far.

I also have the roasting tin book and cook some of jack monroes veggie recipes from her website.

This book - Beyond Baked Beans Green - is great. It assumes that the reader lacks money, time, equipment and expertise. Technically it's aimed at students, but it's actually fab for cheap / quick / easy weekday meals
