Are sprouted potatoes safe to consume?

I always keep mine next to a bag of onions and that's they've sprouted. But I've just read the could cause stomach issues( and possibly even death if they're really badly sprouted). What's the truth?

Potatoes are fine. But potato plants are highly toxic, especially the berries Also the VP potatoes themselves if green and/or sprouting

Always been taught to just peel sprouting potatoes. And chop out any green bits. Never had any issues.

And as a contradiction to all these responses, I wouldn't touch a sprouting potato.

But then, I'm the type who won't touch anything if it's a moment past it's best before date so don't listen to me

I work on the basis that potatoes are cheap so I don't mind cutting biggish chunks off them.

& whilst I always have them in, I don't actually cook them that often (rice or pasta are quicker carbs to cook & don't need prep!).

So generally once I do get the spuds out, at least some of them are a bit green & sprouty.

I trim all the green bits & sprouts off, cook the lot & freeze the surplus, either parboiled ready to roast or as mash.

Then I buy more potatoes...
