Does anyone have a weekly meal plan for a low carb home-cooked low- budget household of 2 adults?

Thanks in advance.

Place marking as this interests me too.

My top tips involve cauliflower rice, lentil curry and chickpeas.

If you sign up to Diet Doctor newsletter they send you a low carb meal plan for two weeks.

Are lentils and chickpeas low carb? I didn't think they were.

ILoveShula · 06/07/2021 17:55

Lots and lots of veg.

Fast 800 books have a 2 week food plan, not zero carb but low. Some really good recipes too.

Sausages - just had sausage meat stuffed in aubergine with mozerella and garlic. Delicious. Also made a wicked Tuscan sausage soup which sounds odd but is fantastic (zuppa toscana if you’re googling)
Pork chops (and pork in general often cheaper - shoulder etc usually slow cooked and can feed us many times depending on size; also pork belly. Cheap and yum)
Frozen fish for a fish pie with cauliflower topping
Eggs and eggs some more. Eggs with salmon eggs on their own omelettes etc the list is endless
Mince can be used for burgers, meatballs, beanless chilli with avocado and sour cream
Roast a chicken (not the famous mumsnet one) but it should do you a meal with veg and then possibly salad and I always make a soup from the carcass.

Great ideas - thanks. I’m being lazy and not wanting to reinvent the wheel! I’ll look at the diet doctor and fast 800 ones.

I like to cook a smoked gammon joint. Usually, there's not too much fat on it so you get loads of meat for your money. I serve it cauliflower cheese, then leftovers in an omelette with cheese and coleslaw on the side.

Breakfast and lunch :
Omelette with veg and cheese.
2 boiled eggs
Mozzarella, tomato and Avacardo.
Veg with hummus
Poached eggs with baked beans (add chilli, onions and peppers).
Asparagus with eggs and Avacardo.
Bacon, sausages and tomatoes.

Dinner:
Anything you normally have but replace any carbss with veg, salad or veg mash.

Burgers/chicken cut up in to a massive salad with Avacardo and Mozzarella.
Sausages veg mash and veg
Bolognese with veg mash.
Curry with salad or veg mash.
Roast with veg mash

I hate cooking so when I low carb I make it as easy as possible.

Still some gaps where I’m not sure…

Mon
Lunch - chicken salad (one chicken breast split between 2) with pesto, cherry tomatoes and shredded mozzarella
Dinner - courgette fritters and use leftover courgette spiralised instead of spaghetti on Wednesday www.bbc.co.uk/food/recipes/courgettefritters_87587

Tue
Lunch - same salad as yesterday, with second chicken breast
Dinner - cauliflower cheese with bacon lardons. Use remaining cauliflower on Friday and remaining bacon lardons on Wednesday.

Wed
Lunch - tuna butterbean salad realfood.tesco.com/recipes/tuna-pepper-and-butterbean-salad.html
Dinner - bolognese with courgetti

Thur
Lunch - same salad as yesterday
Dinner - frittata www.bbcgoodfood.com/recipes/masala-frittata-avocado-salsa This says it serves 4, but we find that for an evening meal with no chips or potatoes (only a green salad) we eat more than a quarter each! Any leftovers make a good lunch.

Fri
Lunch - leftover frittata
Dinner - cauliflower egg fried rice loosely following this recipe realfood.tesco.com/recipes/egg-fried-cauliflower-rice-with-prawns.html

Sat
Lunch -
Dinner - cod, lentil and beetroot traybake realfood.tesco.com/recipes/cod-lentil-and-beetroot-traybake.html

Lentils aren’t low in carbs, 180 grams of cooked lentils provides 36 grams of carbs. They are v healthy, sure, but low carb they are not. They would be more suited to a moderate carb diet.
