Steak sandwiches

I've offered to make DH a steak sandwich when he gets in from work. I have minute steak and a baguette. What makes a really great sandwich? Shall I spice the meat beforehand? Grill the baguette or not? Does it need mayo, mustard, ketchup? I take it that fried onion is non negotiable.

I'd fry the onions...maybe with a pinch of sugar to caramelise them and a splash of balsamic

Mix mayo with mustard to make, suprise suprise, mustard mayo Grin

Sounds daft but make sure you slice the steak across the grain, I’m sure you would but it makes it so much harder to eat when it’s sliced with the grain.
Personally I like tartare sauce on a steak sandwich

I like onions and mushrooms on a steak sandwich, mustard mayo is also yum.

Good tip re slicing @FelicityBeedle thank you. DH is firmly of the belief that tartare sauce is only for fish though.

Def mustard mayo, not garlic. Little butter on the steak when cooking. Agree, lightly toast the baguette.

Rub some garlic on the baguette when it's hot if you can grill it for a few mins. That will give it a real pop of flavour. I would also really season the steak well with plenty of salt and tons of pepper. Mustard mayo sounds nice, definitely nicely browned onions. Maybe some spinach (raw) if you have some?

Rub salt and spices into the meat and let it sit to tenderise it before cooking.

Add some chopped garlic to the onions just as the onions are almost finished cooking, so only cook the garlic for a few moments.
Don’t overdo the steak.
If you got gherkins, chop some up, mix with a couple of teaspoons of capers and put into the baguette with the steak. Tip any juice from the cooked steak into the baguette too.
YY to mixed mustard & mayonnaise.
Pour out a glass of red wine. Wine Wine

If you salt a steak do it at least an hour before cooking, just before or afterwards

My favourite steak sandwich has caramelised red onion mixed with some crispy chestnuts mushrooms sliced, wilted spinach and a bit of creamy blue cheese
One side of an oven warmed baguette spread with coarse grain mustard and some finely chopped gherkins

And yes to PP comment about cutting it across the grain

Really wishing now that I'd waited for dinner and was having a steak sandwich too Grin some great tips here. Will have to buy blue cheese for the next time. Love blue cheese.

Season steak heavily
No need to toast bread
If you are cooking onions do this first so that they are ready
Cook steak in a v hot pan briefly each side and let rest
Split bread and spread lightl with Dijon mustard
Pop steak with its juices into the bread with onions
Salad on side

DH had a dismal day at work and was in a glum mood when he got in. I cooked, he ate, his mood is vastly improved and he has reviewed his sandwich as "fucking awesome".

I did very lightly toasted baguette rubbed with garlic then buttered lightly, lovely soft shallots, steak seasoned and spiced then cut across the grain and fried hot for two minutes. Left to rest while I added mustard to the bread, chucked some butter in the pan with the aforementioned garlic to mix with the steak juices, poured them on top and served. It does smell utterly bloody lush. Thanks MN 😀

I use this recipe for left over roast beef but it would work for steak too. I don’t bother with the root veg chips.

I had a steak sandwich today with Sainsbury's shop bake seeded bread, ketchup and mayonnaise. Divine. DH made it for me. Whole steak in sandwich no cutting. back to basics.

but

yes, toast the bready part and put in in a low oven so it is still warm when served

you can put your relish or mustard on it to be warm as well

I do it with minute steaks. One is not enough.

I put Dijon mustard and ketchup on mine

maybe finely sliced tomato and onion and some leafy green thing

and a flagon of Red.

I also go to a place that serves it with rump steak, but pre-cut into mouth-sized slices before loading on the bread

I prefer a round soft bread to a baguette, which does not quite fit in my mouth so I have to use a knife and fork.
