I need lunch ideas for taking to work please

At work I have access to a microwave, kettle, toaster and fridge. I quite often only get a 10-15 minute lunchbreak. I need something non smelly that is filling but quick and easy to get ready.

I’m fed up of sandwiches or soup atm.

What do you take to work for your lunch? Any ideas appreciated.

I just make an extra portion of dinner the night before
Means it’s always varied so I don’t get bored

Wraps. My favourite at the moment is ham, cheese, caramelised onion chutney with salad.

Falafel in wholemeal pita bread with hummus and salad

This is a good basic low fat recipe for a chicken and sweetcorn sandwich filling that I make often: www.greengiant.eu/chicken-sweetcorn-pittas/

Basic quesadillas - tortillas, cheese, refried beans. Top with a little salsa.

Pasta salad

Veggie Frittata - easy to make using whatever veg and cheese you have. I often make a big one when I have leftover veg to use up and freeze.

Agree with making extra so you can have leftovers for lunch.
Or if you are making a pasta dish, cook extra pasta to make a pasta salad/potatoes for potato salad.
Beans on toast
Scrambled or poached egg in microwave (although you might consider that smelly.
I like cold pizza, not everyone does.

Either left overs or a multi layered salad. When I was working it was usually left over rice and whatever main dish I had made but I deliberately made too much. I’m Chinese and that’s very much how lunch is taken for work. But I did like my multi layered salads. We still do this if were going out for a picnic. Lettuce, watercress, olives, tomatoes, potato salad, coleslaw, cheese, we always have a few types of cheese so maybe feta or cheddar, preserved peppers, various chopped up stuff like carrots or bell peppers, hard boiled eggs. We don’t eat a lot of bread. I has one job where we had free food vouchers for six years, that was amazing.

Leftovers from night before. Easy and no extra things to buy or planning. Just make a couple extra portions of things here and there and freeze if necessary.

Baked potato- I always bake extras then feeeze, they take around 5 mins in the microwave from frozen, separate tub with filling of choice

Savoury flapjacks.
Sushi slices made with smoked salmon so no raw fish problems and made in a loaf tin with layers it makes a really nice lunch option.

I cheat a bit and buy falafels. I make a salad go with it. But if sweet chilli sauce.

Crackers and cheese
Hummus and crackers

I tend to batch cook something at the weekend and take in a portion each day. Roasted vegetable couscous, pasta salad, etc.

Fupoffyagrasshole · 02/07/2021 13:08

Mostly leftovers from last night ! Usually have a big batch of daal ready or veggie curry or some pasta or something

MotherWol · 02/07/2021 13:15

Snack box: some cherry tomatoes/crudités, crackers, cheese, olives, hummus or whatever other picky things you like. I’m a big fan of the picky lunch.

Loubiemoo · 02/07/2021 14:15

Thanks for the ideas everyone.

@ChateauMargaux I’ve never heard of savoury flapjacks?

Also, Spanish Omelette is another idea.
