I am making Lasagne and Freezing it

We are going away on Holiday on Saturday. I want to make Lasagna today and freeze it before cooking/reheating on Saturday at our destination.

Do I…
A) assemble it and freeze it?

Or

B) assemble it, cook it and freeze it?

I can’t work out the best way.

NB// we had pasta Bolognese for dinner last night so I just need to make the white sauce and assemble.

I'd probably cook and freeze.

OakleyStreetisnotinChelsea · 30/06/2021 10:16

Cook it. Then depending on the length of your journey either fridge and then cook box with ice packs for journey or freeze and chill box/ bag for journey and heat through for your dinner. Unless a really long journey you don't need to freeze lasagne made today to eat on Saturday.

I always cook it and freeze it, hadn't thought of the alternative, but whatever suits you.

I always cook it then freeze it.

Caspianberg · 30/06/2021 10:18

I always just assemble. The Bolognese part and white sauce are already cooked so the only thing that isn’t is the pasta layers and cheese on top.

Always comes out nice, and doesn’t get overcooked then. Just in oven for about 45mins as usual.

I cook and freeze, defrost on the journey to reheat for that night.

We also used to take a nigella cola ham, packed in the cool box with the frozen lasagne as an ice block for sandwiches through the week. Have a great time!

violetbunny · 30/06/2021 10:21

Yep I always just assemble, for the same reason - bolognese is cooked already.

BiarritzCrackers · 30/06/2021 10:21

I would freeze it uncooked. I can't see any advantage to cooking it twice. And you won't have to have the oven on, or wait for it to cool before freezing. Also means you can cook it for ages at your destination to make sure the middle is up to temp.

worrybutterfly · 30/06/2021 10:23

I always freeze it uncooked (obviously the mince inside is cooked).

Then I either defrost and cook for 45minutes or if I forget to defrost then I cook it from frozen for around 1hr 20mins.

Daisydoesnt · 30/06/2021 10:25

Are you using dried of fresh pasta OP? Sometimes with using dried pasta and not cooking the pasta sheets start to curl up and lift out of the bechamel which is annoying and looks weird. For that reason I say cook then freeze.

Shmithecat2 · 30/06/2021 10:26

I tend to make a big lasagne, have some for dinner, then portion and freeze the rest. Comes out lovely, with the added bonus that it can be microwaved if needed, where as an uncooked portion couldn't.

LagneyandCasey · 30/06/2021 10:31

Definitely cook it. Reheated lasagne is the best food ever 😋

eltsihT · 02/07/2021 08:48

Thanks everyone one, Shmithecat2 that’s what I tend to do too. Love a reheated Lasagna.

As I was using dried pasta sheets, I cooked it first. (Thanks daisydoesnt)

Picture attached of it when it was just out the oven .

Ooh that looks nice, I love lasagne.

Miljea · 02/07/2021 23:02

Cook first, reheat later.

My dear ole mum - rest her soul, whom I taught making a lasagne to- would assemble, leave, cook, serve.

Sloppy mess.
