Veggie recipes your kids love?

We recently became vegetarian as a family and are trying out lots of new recipes - we've got loads of books (Green Roasting Tin, Jamie Veg, World Vegetarian...) which are great but one or other of the kids (primary age) turns their nose up at maybe 80% of the dishes, which is obviously not great. They prefer Quorn nuggets etc but we obviously can't live on those.

What are your favourite veggie recipes that your kids love? Midweek/quick/easy would be great but more involved recipes welcome too. :)

I have one quite fussy DC and I search high and low for healthy things she will eat, especially vegetable-based. She will eat most things that come in a wrap, so I make vegetable fajitas or burritos/tacos with black bean chilli (not very spicy). I also make a type of vegetable pancake - it is a thick, American-style pancake batter with sweetcorn, grated carrots, grated courgette and cheese in it. Then ladle spoonfuls into a frying pan or griddle and serve with a poached egg/baked beans.

Also, most pasta-based dishes. Sometimes I add pureed butternut squash to macaroni cheese which ups the vegetable content without seeming to affect the flavour too much!

Homemade soup - vegetable/lentil/tomato/minestrone also usually gets eaten if there is plenty of bread to dip in.

There's a brilliant broccoli and bacon pasta bake recipe in the quick roasting tin. We just leave the bacon out. I whizz you the stalk and all.

BBC good food burnt aubergine chilli (it isn’t spicy) has recently gone down well with young nieces and nephews. It’s a long cook but it’s easy to do a huge batch and freeze.

I think I'm going to try Jamie veggie enchiladas first, and then work through the rest. Burnt aubergine chilli sounds amazing :)

Another one praising the burnt aubergine chilli - it has dark chocolate in it so 5yr old will eat it, calls it chocolate chilli!!

Homemade pesto goes down much better than jar here - could put on potatoes or as a dip for the one who doesn’t like pasta?

Mine love cheesy bean pastries - sheet of puff pastry, bit of beans and cheese, brush with egg. Not very healthy but can serve with veg!

The butternut squash wontons in Jamie's veg book are lovely. DH and I make them regularly and they were fiddly at first but now we can knock them out in about 20 minutes once the squash is cooked. I was worried about the miso (does anyone else remember Gillian Keith forcing people to eat miso soup? Made me scared of it for years) but I couldn't pick it out as a flavour, just a good mix of sweet veg and savoury flavouring).

The allotment cottage pie in the same book is delicious. As are the Dosa's (what kid doesn't want a pancake dinner?). I found an easier recipe for the dosa batter but follow the rest of the recipe.

Dosa batter: Mix 300ml warm water with 1tsp yeast, 100g plain flour and 50g rice flour. Leave to sit while cooking dosa filling. Just before cooking, add 1tbsp apple cider vinegar and 1/2 tsp salt.

Has anyone made the aubergine chilli without gas? We just have an electric cooker...

Most of what's been said, but also mattar paneer, bean chilli, roast cherry tomato pasta, grated carrot and courgette pasta, and 'yellow lentils'. The last one also doubles as a lentil paté when cold - I can pm you the recipe if you're interested, it's really easy.

I use this Sainsbury’s recipe. I wouldn’t say they were super quick but not ridiculous. Also make loads and freeze (uncooked).

I'll admit I haven't tried it (have a gas stove) but I would think you could achieve the same effect under the grill - like you do with peppers.

Definitely think aubergines under grill would work for the chilli - tbh I’ve never gotten a strong auberginey taste in the chilli so maybe I’m doing it wrong on the gas! It’s still delicious.
