Can you divulge your best Thai red curry paste recipe?

There are so many versions on the internet and they're all wildly different! Do any of you have a tried and tested favourite?

I've tried jar paste but it's never the same as making it.

See I have tried to make it so many times, but I never make it as nice as the Blue Dragon paste.

I like it really strong and hot though so we use a whole jar of paste to one tin of coconut milk (and chuck a few chopped red chillis in!).

I use Mae ploy paste and then tweak it to my taste.

Another vote for Mae Ploy. We currently have the red, green, Massaman (sp) and penang on the go. Relatively cheap considering that it lasts forever in the fridge (no need to worry about best before dates, it's usually a year or two past once it's finished here and it's fine).

I'd happily bet that many Thai people use this rather than making their own and are happy with it.

I get mine from the specialist Chinese or Thai supermarkets, but you can get it in some large supermarkets or its on Amazon.

We did a cooking class in Thailand and they told us that all the hotels and restaurants use supermarket paste!
Id go for those big plastic tubes you get in Oriental supermarkets, if there is one near you, rather than the jars. Very spicy though so be careful. May add some fishsauce too

We also use the Mae Ploy ones (here in Germany you have to go to a Chinese supermarket to get them). We got a 500g tub of the red curry and we're mining it out one tongue roasting spoonful at a time Grin

I just use supermarket ones but always fry paste in oil at beginning. I also always add lime leaves, fish sauce, squeeze of fresh lime and fresh coriander.

Another vote for Mae ploy, so much faff making your own paste and often still not as authentic as Mae Ploy.

Trust me on this, no offence but, they lied to you! Wink That would be like going on a cookery course here and they pull out a packet of gravy granules and tell you that's how all the top hotels and restaurants make their gravy. Not all hotels and restaurants in Thailand will make their own paste, but every local market has stalls with curry pastes like the one in the picture, and many restaurants will use these as a base adding shrimp paste, fish sauce to taste etc. Lets be serious, would anyone choose a processed supermarket paste when you have pastes like these on your doorstep? A tub of Mae Ploy or something similar wouldn't get through the door of most restaurants in Thailand. And for anyone who thinks those pastes are the authentic taste of Thailand, you really need to try some better eating places!
