I'd to change up our dinner routine a bit. Would love to hear some meal planning ideas. We have 1 toddler DD and I'm looking for some healthy options too as DH has to mind his cholesterol.

I do one rice dish, one pasta dish, one potato dish, one vegetarian dish and one homemade takeaway dish as my base for the week.
Ideas-
Spinach and sweet potato Dahl on bbcgoodfood site
Homemade pizza using own dough made with whole meal flour and lots of vege toppings
Oven baked chicken breast covered in salsa and then some cheese on top for the last 10 mins served with jacket potato and lots of veges
Tray bakes. Nigella has a Spanish chicken one which is yummy
Vege chilli
Vege bolognaise
Chicken pieces, zucchini and spinach in a tomato based sauce with pasta
Home made fried rice made with about 4 times the amount of veges in it that the Chinese takeaway does

Try the Batch Lady. She has some great family options. M
Not all are wonderfully healthy but there are some!

From a budget point of view, and to save on wastage, I try to plan carefully for perishables and use them two days on the trot but in very different ways. Eg broccoli with a roast, then broccoli added to macaroni cheese. Iceberg lettuce with a salmon or tuna salad then in chicken fajitas the next night. I hate floppy things in the veg shelf.

I do a bolognaise with turkey breast mince, I Fry (in olive oil) a couple of chopped carrots, couple sticks of celery, large red onion, 1 large chopped pepper (any colour but green) and about 4 cloves chopped garlic, add mince and break it up, then add three tins chopped tomatoes and simmer for about an hour or until all the liquid is cooked off. Healthy and lots of veg.

I use good food app, I do a search by a main ingredient, say carrot for example, then scroll through the suggested recipes

Tuna burgers with cucumber salsa www.sainsburysmagazine.co.uk/recipes/mains/tuna-burgers-with-cucumber-salsa
I’d double this recipe and serve DH two burgers. Serve your toddler a chopped up burger, cucumber sticks and the extra half a burger bun that you’ll have left toasted and spread with the mayonnaise.

Pasta with salmon and peas www.bbcgoodfood.com/recipes/pasta-salmon-peas Any extra makes a good lunch the following day.

Use up the remaining crepe fraiche from the above recipe (I always end up with 60g left) in this recipe www.bbcgoodfood.com/recipes/creamy-mash (halved). Serve with this quick stew realfood.tesco.com/recipes/chorizo-butter-bean-and-spinach-stew.html Any remaining portions are great for a quick lunch with crusty bread or a jacket potato. Or only use one tin of beans.

If you’ve got any chorizo left from above stew, I’d put in in this www.bbcgoodfood.com/recipes/special-fried-rice-prawns-chorizo

Frittata www.bbcgoodfood.com/recipes/pea-feta-summer-herb-frittata It says it serves 4, but we have it as a main and it would be perfect for two adult portions plus a toddler. Just use normal peas, not petits pois. It uses feta and cream cheese which you’ll have left for lunches. I’d be tempted to get some smoked salmon or pastrami and bagels.
