Food rut

That question. What to cook, what to bloody cook. Every day, every single day. HELP ME! We are eating pasta for almost every meal. I love pasta, but if I make another variation of pesto with pasta my soul will shrivel.

I know I'm being lazy and could google. I have done that I promise. But I just end up befuddled, now I need the help of mumsnet for your tried and tested recipes.

Please, please give me some ideas of recipes. Please! Here's the restrictions (yep, you knew they were coming):

  • vegetarian or easy to make a veggie portion (for me, my kids and DH are committed carnivores and would be delighted with meat options)
  • vaguely healthy
  • able to survive the scathing critique of 2 young children who are currently very happy with pasta, pasta and more pasta.
  • not pasta

I have a piece of paper at the ready for my shopping list for next week and promise to put my fate in your hands. I will make every recipe suggested (I feel I might later regret that commitment) Grin.

Chilli loaded sweet potato fries? Using black beans (should satisfy the meat eaters too) with dips if you want
Make the sweet potato fries and add the chilli on top to serve

Teriyaki aubergine for you and chicken for the rest of the family with egg fried rice. Cover aubergine chunks/ chicken in sauce and put in the oven to cook (Chuck some green veg on the side too)

Mushroom risotto add crispy lardons on the top for meat eaters and mix spinach and peas through just before serving

I know you said no pasta but meatball spaghetti (make mushroom meatballs for you & freeze a batch so you can just take out what you want)

Home made pizza with pick your own toppings

Roasted veg with new potatoes with add cubes of halloumi for you and sausages for meat eaters

Have similar requirements in our house and these are some of our regular meals

@ForTheLoveOfWine and @Fivemoreminutes1 thank you so much that's the menu for the next couple of weeks sorted. I'm writing them on the calendar now so no one can argue with me! I'm hoping we can add a few new ideas into the list of family favourites.

Particularly excited by the cheese and tomato bread pudding which looks weird and wonderful and should help us use the inevitable leftover bread at the end of the week. And teriyaki aubergine is genius.

We've been doing Simply Cook. It's £9 a month for four meals (most are for 2 but they tell you how to scale up for 4).

I like them because they just send the spices and recipe card. This means you can control the quality of meat/veg you use. It also means they have a long shelf life. I've had friends who've used Gousto and Hello Fresh but have complained that the ingredients arrived and had to be used by the next day.

We've enjoyed so far:
Cajun meatballs and spicy rice
Goan cauliflower curry
Beef Stroganoff
Beef rendang
Brazilian fish and rice stew
Chickpea koftas with tzaki
Prawn red curry
Sausage pasta

I look forward to the box arriving each month.

There do seem to be plenty of veggie options, or a veggie swap.

happylarryharry · 16/05/2021 06:30

Thanks @TinyDicksAndGlitter we tried hello fresh and simply cook. Me and DH quite enjoyed both of them but the kids weren't a fan of nearly all the recipes unfortunately.

I'm in the same situation, I'm veggie and DH and the 3 kids aren't.

This week:
Meatloaf/veggie burger with mash and veg
Tortellini with salad
Veggie chilli (slow cooker) and rice
Aubergine parmigiana
Chicken/quorn escalope, new potatoes and vegetable
Paneer curry, rice and dhal (I make big batches and freeze)
Pizza (homemade)
Meatballs/quorn meatballs and spaghetti

happylarryharry · 16/05/2021 15:31

Thanks @Fivemoreminutes1 that homity pie in particular looks amazing and I can do some sausages with it for the kids which should win them over! Thanks @pinkplantpotspot too - I hadn't even spotted quorn escalopes.

I think I'm up to a full month of meals now from all the suggestions which I'll mix in with some of our old favourites which is brilliant and very much appreciated!

Try something like this and add meat and or fish for the carnivores.

ForTheLoveOfWine · 16/05/2021 19:10

Another one to add
Mac & cheese but with spinach peas and broccoli mixed in always goes down well in our house too, having it tonight reminded me and pretty easy to make just cook macaroni for 2 mins less than pack says .
White sauce 50g butter 50g flour to 500ml milk (adjust depending what you need) then a bit of mustard mix in cook for 15 mins then add cheese and grill until golden

ForTheLoveOfWine · 16/05/2021 19:11

Mix in sauce with pasta & veg that should say then cook

happylarryharry · 18/05/2021 10:52

Ooh sorry, I missed the latest replies. Thanks @ForTheLoveOfWine and @Jongleurterre these look great too.

It's going ok so far, we've tried the enchiladas, loaded sweet potato fries and a new curry so far. The kids turning their nose up to some of it, but I'm giving sides of veg they'll eat etc to take the pressure off and make sure they eat something and we don't have to have the same boring meals every night. Fingers crossed we can keep up the momentum with all your lovely ideas!
