If you use blue cheese in sauce, is it lumpy?

Just that really! I have a piece of blue cheese to use up but am not a huge fan if I'm honest, except for maybe a sliver on a cheese board. I do like a strong cheesy taste so was thinking of putting it in a bechamel sauce for a lasagne but will it melt down smooth or have bits of 'blueness' in it? Thanks!

It will melt down smooth. Be careful about how much you put in though because it’s strong! Just add a bit and check and then add more as needed.

Blue cheese is great but it has no place in a lasagne. Bechamel doesn't have any cheese in it, let alone a blue.

Thanks both! Yes, I know it would be a bit unusual but tbh my sense of taste is badly diminished through covid so part of the reason was that I thought it might give me a bit more umami and salt to pick up on

We use the knob ends of blue cheese for Cajun chicken sandwiches.

Coat chicken breast in Cajun spice cook.

Mix cheese with some mayo, to taste, spread on bread, add chicken and eat 😊

I like blue cheese so much, I would happily add them to lasagna. Bechamel with added blue cheese sounds yum! But just for me, my dh or ds won't eat it.

Blue cheese sauce is great for pasta generally though, e.g. ravioli. I do a pasta dish with a light blue cheese sauce and mussels (can get frozen).

DH does a blue cheese sauce over pork cutlets and potatoes.

Honestly, blue cheese with lasagna is very nice. I have eaten them multiple times, not in a sauce but crumbled on top. Really yum.

Haha tbh I'm a bit put off the idea now and am sharing with a friend (dinner in garden) so might use it for something else. I wonder if it would go with pasta and mushrooms

Yes with pasta and mushrooms!

We have gnocchi with blue cheese sauce spinach and walnuts. Delicious. The sauce is just blue cheese and cream melted together. It is smooth but you still get the odd small lump of “blue”.

Knob ends! Love it. Never heard this to describe bits of cheese, idiot people many times though Grin

I've used blue cheese in several things. The cheese does melt down, but I really like the saint agur creme, which I find easier and quicker to use as a dressing or where you want a more liquid, lump free cheese. Some recipes I've used the creme or a piece of blue cheese melted down is:

  • in macaroni cheese to give added flavour
  • as a salad dressing. I add yoghurt, milk or cream to thin it out, otherwise, melted blue cheese can be overpowering. Figs or ripe pears, lettuce, spring onions and toasted pinenuts or walnuts go well with a blue cheese sauce.
  • blue cheese sauce over vegetables is delicious (potatoes, carrots)
  • Instead of cauli or broccoli cheese, I've added some blue cheese too

I once had a lovely pasta dish with blue cheese, roasted butternut squash and peas. I must have had it in a restaurant but I used to recreate it. Was v good!

The Classic way to use up Blue Cheese is to make a Broccoli and Stilton Soup, very popular in Local Restaurants prior to Lockdown, and delicious when served with freshly baked Bread!
