Does anyone else have things they know, but always have to check?

Was just pondering this as I made béchamel yesterday and despite knowing, in my bones, the correct ratios I still had to check. I’ve been making it for 20 years! It’s not complicated! Now wondering whether I have some repressed white sauce related trauma, like an extremely boring sequel to The Machinist.

Practice and practise. Even though I know (I think!) the first is a noun and the second a verb, I still have to check it and look up how to use it.

Oh and ordinary. I’m desperate to write ordainary because it looks better to me, like @MrsFin with occasionally. Autocorrect constantly puts me right on it.

You know what @CarlottaValdez I’m going to seize the day and just stick a label on the side of the flour bin with the proportions. I shall unshackle myself from the béchamel shame!

My white sauce recipe is on page 112 of an unwieldy cookbook too. Spooky

It’s probably the same one! Leith’s cookery bible?

I too have to check which side the petrol thing is and am also terrified of accidently putting Diesel instead of petrol so have to double check that I have the right one
