Help a Non-Cook Make Veg More Interesting?

Hi, I have recently tried to get into healthier eating. However, the only way I know how to cook veg is to boil it to death, then maybe chuck some gravy on it. I need some new recipes but here's where I become a PITA. It needs to be vegetarian, and low carb (Type 2 diabetic) and not too complicated. Nothing too spicy. I have a really wossy tongue it can't take to much heat! I am no cook, don't enjoy it much, and wasn't taught to cook growing up. I have expanded my tastes over the years however. I shall post some veg, and accompaniments, below, and a definitely , 'No,' list too.

We recently bought a toaster oven, broiler, air fryer thing to replace our old toaster oven. It has a basket for air frying. I read that the air fryer was great for vegetables, and it is. We have had various veggies made that way. A tiny splash of olive oil, a bit of salt and pepper, and some spices if desired. They turn out very well and cook quickly. Asparagus and brussel sprouts particularly good.

Just noticed the soup upthread. I roast butternut squash and cauliflower, then pressure cook in instant pot with stock and blend with hand stick blender. I have a mild curry spice blend I put in it. The family love it.

Roast cauliflower; look at Meera Sodhi for delicious curry/ lemon flavour
Spaghetti alla Norma; aubergine and tomato sauce , look atYotem Ottolenghi.
Roast autumn veg; eg red peppers plus squash plus onions.
Roast carrots , tiny bit of oil , s&p , halved lengthwise if thick... if they are good carrots you can't go wrong.
Don't buy asparagus out of local season but when you have it steam it and serve with butter or soft boiled eggs.
Meera sodhi also does a nice vegan yaki udon that is straightforward and tasty.
Caesar salad; multiple on line recipes.
Celeriac remoulade
Cole slaw
Slow roasted shredded red cabbage .
Etc
