Vegetable box challenge

I appreciate these vegetables might not be challenging for everyone....

Feeling really unhealthy recently I decided to tackle diet. First fruit/veg box we used most of the contents. I have two large courgettes left which look slightly past their best. Couple carrots/parsnips.

This week - a whole celeriac (barely want to touch it!), a huge red cabbage, bag curly kale and biggish aubergine (some other stuff that will get used).

Fruit is easy - DC will eat eat all fruit. I don't think either will touch the above vegetables so i probably need recipes that i can freeze. Thinking root vegetable soup is obvious?

Aubergine and courgette male ratatouille seem obvious. Have never made it but figure i just need tomatoes and garlic.

I have had aubergine in thai curries in restaurants but would rather not eat loads of cream.

A whole red cabbage though?

I am going to get some food shopping this morning so can add ingredients.

Not freezable but i tend to use red cabbage in a stir fry more than anything else. You could make coleslaw with it to.

Braised red cabbage is ace. I eat it cold too with salads.. Mmmmmmm

Jamie's veg aubergine curry is epic. Made with low fat coccnut milk.

Use in spring rolls.

Ohhh I just remembered a recipie for a stir fry veg paratha rap with red cabbage Carrott and eggs. It's amazing and really fresh

Red cabbage is a challenge in our veg box too! I make it into a pickle to have with salad or roast chicken. Very easy, lots of recipes online.

I've made celeriac gratin before but might not pad your loads of cream test! I've used it instead of celery with onions and carrots as a base for tomato sauce too.

Aubergine is white nice in a tagine style thing with chickpeas and tomato sauce. I use a Jamie Oliver recipe that also had lamb, but you could do it without.

I'd make celeriac dauphinoise - it's divine
Also red cabbage is a regular here , I chop onions and smoked streaky bacon and fry that , then put the shredded cabbage on top , lid on and kind of steam ? With vinegar - cider / white wine / red wine . Takes a while but is really good.

Courgettes ~ make courgette & pasta soup with them as they need to be used up, it's a quick soup to make as the courgettes are grated, also a pretty looking dish.

Aubergine ~ I'd make Pasta Siciliana which has the aubergines in a tomato sauce, or aubergine parmigiana which is cooked with cheese and can be a side dish or a main dish.

Celeriac ~ You could use some cubed in a tray of mixed roasted vegetable, but I like it best as a salad remoulade.
Why can you barely bring yourself to touch it though?

And there's a recipe online for burnt aubergine chilli - I've not tried it yet but it's been mentioned on here before and is very popular?

Thanks for more ideas. I love red cabbage when i have had it with roast in pubs but have never cooked it.

Mash a little celeriac and apple into your mashed potatoes, it's lovely.
Grate red cabbage carrot and onion and add mayo or dressing for slaw.

Courgette, potato and cheddar soup
Make potato boulangere with celeriac in
Celeriac remoulade- amazing on ham sandwiches or with gammon
Creamy celeriac soup
Braised red cabbage (amazing with pork or sausages)
Red cabbage also keeps for ages- it is nice thinly sliced into salads, or mixed with a bit of vinegar as a quick pickle with curry
Aubergine- moussaka, baba ghanoush (you could make a homemade doner kebab with red cabbage salad and baba ghanoush)
Kale- kale pesto (honestly it is delicious and so easy to make)

Delia’s braised red cabbage recipe - fills a whole casserole pot but freezes well so you can pull out one portion and microwave when needed.

Why can you barely bring yourself to touch it though? i get weirded out a little by certain appearances. Knobbly tree back and roots do it to me.
I'll be fine once I've got rid of the outside.

We make it into a slaw. Really yummy and the kids eat it.

Chop red cabbage finely.
Mix in Mayo and curry powder.
Add sunflower seeds
Add sultanas
Add chopped apple.

Leave for a few hours before serving in the fridge.

I make a wonderful braised red cabbage and sausage casserole from Marcella Hazan. It's so simple you can't believe it will work but it does - just red cabbage, a pound of sausages, olive oil and garlic. Something about using slightly more olive oil than appears necessary at first, and cabbage braising down just creates this amazing alchemy and you end up with silky cabbage and lovely sausages. There's a Thai thing called Aubergines Sam Rod which is delicious. It's aubergines in a thin batter in sweet and sour sauce. I wish I could make it.

I had roasted celeriac in place of roast potatoes on yesterday's dinner. It was lovely :)

For the aubergine you could cut into thick slices, sprinkle with salt and grill them, then top with chopped tomatoes, garlic and basil and a grating of cheese then back under the grill.

For the red cabbage I like to do Jamie Oliver's braised red cabbage and then freeze in portions - it takes a while to make so it's nice to have a portion ready made with no fuss for a roast dinner.

You can make the kale into crisps (toss in a little olive oil and some salt, then bake in the oven, in a single layer, for 10 to 12 minutes).

Courgette grated with turkey mince, spring onions and herbs for Otolenghi Turkey Burgers. Tasty cold too.

Red cabbage, avocado and sweetcorn side dish, from this Bean Chilli recipe. Red cabbage also keeps crisp for ages in the fridge. Just remove outer leaves and slice the edges off if goes a bit limp or brown. Dr Rupy's cook books are really good.

I made a celariac, leek and potato soup that was nice. Also apparanly roated whole is good, but not tried it.

If i have stuff in my veg boxes i need inspiration for i just search on BBC Food or the guardian has good recipes too.

Make sauerkraut with your cabbage, mmmm.

Eggplant and courgette curry with coconut cream and cauliflower rice is really yum! You could add kale to this.

Slightly crisped kale with a little olive oil, lemon juice and salt and pepper is also yummo.

If you stir fry the kale over a high heat in just a little oil (dry it thoroughly if you feel the need to wash it first) until it starts to crisp and even slightly char, then sprinkle with salt and pepper, it's a delicious and unusual green veg accompaniment.
Aubergines and courgettes are the food of the gods. I love to brush them with a bit of oil and grill them in thick slices, (along with a red pepper maybe?) and use them in a burger bun with grilled halloumi (instead of the meat) and a smear of pesto. Or just have them in the fridge for sandwiches going forward. They're great with hummus or in a mozzarella toastie.
The red cabbage will last for ages so don't stress. I'd make the coleslaw suggested above by @DobbyTheHouseElk with one half and have Delia's braised red cabbage with my Sunday lunch with the other.
The only thing that would throw me a bit would be celeriac - but you have some great suggestions upthread.
