What are your easy midweek meals if you have a toddler?

I'm living off pasta bolognese and mild chicken curry. I'm desperate for a few more ideas please!

baked mackarel/salmon with lemon in a foil parcel, rice, and tenderstem brocolli/green beans. DH and I add soy sauce to ours.

Green pasta - mixture of pesto and cream cheese, any random vegetables.

omlettes/frittata with cheese and peas.

(DS2 likes potato waffles...not the healthiest but really easy to eat when teething)

Meatballs with sauce on the side as she’ll only dip it in!
Salmon and pasta with a little butter
Sausages and mash
Home made chicken nuggets (very easy to do if you Google) and sweet pork to wedges
Recently I did egg fried rice after seeing it talked about on here and it was popular
I also save portions of lasagne and shepherds pie for her and if we have a roast chicken I keep some back for her to have with mash

I made a big pot of burnt aubergine chilli at the weekend, we had it with nachos and salad and toddler had it with a baked potato and cheese (and then some nachos).

It makes 3/4 meals for all of us and freezes well. I’m trying to fill the freezer as I’m very pregnant 😂

Wraps - we do southern fried frozen chicken strips and avocado, peppers, lettuce, tomatoes and let DC build their own wrap, they love it

Pitta pizzas, super fast and toddler can help put toppings on so it’s an activity as well - win win

Stir fry

Sausage mash and veg

Omelette chips and salad

Burgers - we buy nice burgers from the butcher and buns, freeze both. Super quick and easy. Add other toppings and salad, done

Mezze type selection of lamb koftas (again from butcher and frozen), mint and yoghurt sauce which is so quick to make, Cous cous (we’re lazy and buy ready made stuff), salad, hummus and toasted pitta bread

Bean chilli with rice and often veg on the side, although I grate carrot and courgette in while it's cooking to stir through for a veggie boost. Make in a batch and freeze ahead.

Lentil daal. Also batch cook.

Enchiladas. Use batch cooked chilli, wrap and bung in oven for 20 mins.

Fajitas.
