New Waffle maker, I need a recipe.

I've recently acquired a waffle iron.

If you have one, can you share your go to recipe please? And any pointers you may have.

It’s a bit of a faff but worth it:
450ml full fat milk, 225g plain flour, 2tsp baking powder, 45g caster sugar, pinch of sea salt, 3 large eggs separated, 125ml vegetable oil (I use sunflower) 1 tsp vanilla extract.
Put milk, egg yolks, vanilla and oil in a jug and mix well.
Combine flour, sugar, salt and baking powdered in a bowl and whisk in the milk mixture to smooth batter.
In another bowl whisk egg whites to stiff peaks and then fold them into the batter till it’s well mixed, smooth and airy (I use a metal tablespoon for this).
Spray some oil on the heated waffle iron and but a ladle of mixture on each ring (you’ll figure out the right amount for yours after a few overflows!) then cook for 5 mins or so.
Final step is to sit them directly on the shelf of the oven at fan 50-80C to keep them warm while you make a few waffles and this also crisps the edges up very nicelyGrin

I've wanted one for a while and we've hit a wall for breakfast ideas since lockdown. Seemed like a good option.

There are some complicated sweet ones but I just use nigella’s America pancakes one and they turn out fine - can shove some blueberries or even choc chips in for variety
4 tsp baking powder
1 pinch of salt
1 tsp white sugar
2 eggs
30 g butter (melted and cooled)
300 ml milk
250g plain flour

I use the Jamie Oliver recipe. Whipping the egg whites helps. Dead nice.

You can make your own potato waffles - leftover mash mixed with some flour to make a stiff dough is fine. You can also use frozen hash browns to make hash brown waffles - and even put toasties in there for amazing crispy toasty treats!

Yeah the whipped egg whites make them lovely and fluffy and then, of course, you must drown them in maple syrup🤪

It has crossed my mind about potato waffles, I will absolutely be attempting those once I've got to grips with it. Squashed hash browns sounds fabulous - I think I'd love that.

I’ve extensively researched this and my two favourite recipes are one for American style waffles from the metro and a recipe for liege waffles, which someone shared on mumsnet once.

You can use a regular pancake recipe and just add a couple tablespoons of oil to it to make it waffle appropriate.

Has anyone made gluten free waffles with one? If so, how did they turn out?
I really want one but feel mean making them if my daughter can’t eat them.

I just wanted to come back to say I've worked out a good no nonsense recipe, good for mornings if you don't want the hassle of weighing scales etc. All you need is a measuring jug and measuring cups.

2 eggs
300ml milk
1.5 cups flour (I found SR flour the best, SR GF flour also works very well!)
1/3 cup of icing sugar (can be varied to your own tastes)
1.5 inches of butter, melted (cut from a block or 2 tablespoons scooped from a tub)
Make sure all amounts are approximate and very slap dash Grin it all adds to the experience.

Whip the (whole) eggs until light and fluffy (a couple of minutes with an electric hand whisk)
Add milk and mix.
Add flour and sugar, mix fast until smooth
Add melted butter.

That's it. Once you've done it a couple of times, you can do it with your eyes closed!
I've found it lasts a couple of days in the fridge so you can easily make the next mornings mix at the same time as you're making your evening meal, for instance.

Leave out the sugar and top with ham, mushrooms and cheese sauce a la the Waffle House in Norwich.

We made Liege waffles last week. They were delicious and worth the effort. I did find them rather sweet, so might cut back the pearl sugar or the chocolate sauce we topped them with.

They are heavier than the other recipes we tried, so small ones are good. We froze a few and they defrost well in the toaster.
