Can I use chicken date stamped for today - tomorrow?

I've just realised that I've messed up and made pasta for tea when we were supposed to be using chicken which is stamped today. Can I save it in any way?

I was going to make it marinated and breadcrumbed - could I marinate it tonight and cook it tomorrow? Or put it in the marinade and then in the freezer over night?

It's always puzzled me how they work out the Use By date for things. Ok fresh produce Fruit veg meat whatever has a short shelf life so it shouldn't take long to work out how long it lasts before going off.

But what about all those new products that hit the shelves with Use By / Best Before dates years into the future? Tinned stuff. Frozen stuff. Have they TESTED these products for years before bringing them to the market? Did they make a batch and then focus group sample it once a month until more than X% of the testers got a bit iffy about eating it? or do they just make an educated guess?

Plucking hell, I see what you did there...

Agreed that over a year means pretty much forever. Those kind of products have a best before rather than a use by they? Which means still edible but won't taste as good as it could?
