I’m stuck in a rut with meals and time poor come late afternoon so hoping people can suggest a few easy meals (preferably minimal prep, slow cooker would be ideal) that would do me and my toddler for dinners! Thank you!

Mine like any meat which is shredded so the slow cooker works well for that. A pork fillet (about £3 in Tesco) is really good in the slow cooker with a stock cube and a can of butter beans. On low for 8 hours. Mine like veg on the side as they don't like how the colour changes if veg is in the slow cooker too. But if yours is less fussy it makes it easier!

Beef is more £££ but I use the rest of shredded beef mixed in rice and veg the next day.

Or omelettes very quick and easy too.

And the slow cooker is great for chunky soups. Then just bung some garlic bread in the oven at the last minute.

Ahh I love the shredded meat ideas thank you! Will add some bits to my shopping list for this week. Yeh omelettes are a hit here too and I manage to hide veg that would otherwise be turned down Grin

Spaghetti Bolognese, chicken and bacon pasta. Salmon with new pots and veg. Mild curry and rice. Sausages casserole, any casserole in fact, in the slow cooker. Pizza and salad/corn cobs. Omelette jacket spud, beans. I'm trying really hard to just eat normal family meals with my 2 DC. I'd got in a bit of a rut of not being bothered to cook properly since becoming single

Tortellini takes 5 minutes to boil.....I serve it with hidden veg sauce....basically blitzed up veg with tinned tomato.

Mix a couple of tubs of soft cheese with green pesto, add chicken strips and roast in the oven. When the chicken is cooked stir through cooked pasta. My 4 year old loves it.
