What can I make that will use up Sloe Gin as an ingredient?

I have a sloe gin glut - people kindly gave a couple of bottles of their own home-made sloe gin to me for Christmas but in all honesty it's not going to be consumed - I don't drink very much and when I do, sloe gin isn't going to be what I choose. I don't object to the taste particularly but I want to do something else with this.

I wondered if it could be used up in a batch of chutney? I do make chutney quite regularly but would like suggestions for what fruit, veg and spices might work well with the sloe gin taste.

Any ideas for other food recipes which use a glass or two of sloe gin? My googling has only come up with recipes for cocktails, which doesn't really help as I don't want to drink it, and lots of recipes for using up the leftover sloes which have been strained out after the sloe gin making process, which isn't what I have.

I've cooked red cabbage in it, which was quite nice. Don't think I used a recipe, I think I just gouged some over the shredded cabbage and cooked it down. Otherwise I'm a bit stuck. Sorbet maybe?

Baked plums in sloe gin is delicious - Diana Henry recipe from Simple. For four people 12 plums halved and stoned, into a single layer roasting tin/dish. Mix 100ml gin and juice of 1 orange and pour over. Tuck 2 strips orange zest under the plums (and 5 crushed juniper berries if you have them, which I never do). Sprinkle over 50g light brown sugar and bake at 200 for 20 mins.
Slotted spoon to remove plums into a cold dish. Stick the juice in a pan and boil till reduced and a bit syrupy (if you used a big tin with plenty room between the fruit don’t bother with this bit, just pour it straight into a jug). Chill sauce and then pour over the cooler plums with another shot of gin. I like a massive dollop of thick cream or yoghurt with it too and I expect good ice cream would work. You could adapt this for a crumble now j come to think of it....

Sloe gin is lovely warmed up with Apple juice, a bit like mulled wine but not.

i usually mix it with lemon tonic and drink all summer long, much prefer it to pimms!!!

My grandad tips a glass in fruit salad for colour and added interest. Sounds wierd, but works well (he makes it by the gallon; there is always too much to drink). It is also quite nice on vanilla ice cream, just a shot of it over the top.

I have no actual recipies. We just dump it on stuff that there's a chance it would taste nice on... Maybe in some poached pears?

Would work in a plum based chutney I think.
Drizzle on the cake instead of kirsch for black forest style gateau.
Add to plum /damson/cherry/blackcurrant jam
Add sparkling water for a drink
Soak fruit for a trifle or crumble

DH makes sloe gim jam and also a sloe sauce that we have with roasted duck. For the latter I think he just boils it down with some flour like a gravy.

(I know you said you don't drink much, but on the occasions you do, it is lovely)
