Do you have a baked cheesecake recipe you'd care to share??

Inspired by the talk on another thread about different types of cheesecake, particularly Jewish recipes, I REALLY want a proper baked cheesecake.

Has anyone got a relative failsafe recipe?

Nigella chocolate and lime from her Nigella Bites book is pretty foolproof - I adapt it with other flavours, normally lemon and and ginger biscuits!

This one also wonderful allrecipes.co.uk/recipe/13884/tropical-coconut-and-lime-cheesecake.aspx although I also doctored this one by using digestives with desiccated coconut.

White chocolate cheesecake

Make a base using ½ a packet of malted milk biscuits and ½ a packet of hobnobs with 100g of unsalted butter. Melt butter add smashed biscuits, press into 10 inch tin.

Mix a carton double cream with two tubs full fat cream cheese, 4 eggs, 3tbls sugar, 1tbls custard powder and a good splash of Galliano stir in 2 big bars melted white chocolate (400g total, Aldi does one that melts nicely).

Put in cold oven and bake for 1 hour at gas mk 2½, leave to cool in oven with door shut. Chill well

Tastes like a custard slice and very unhealthy, but yummy

Not a recipe as such but a chef I once knew gave me his formula for the filling: for each standard sized tub of Philadelphia used add 1 egg and 100g caster sugar. I use that as my basic filling and add in whatever else we fancy flavour wise or just add vanilla essence and toppings.

This one is so so good and gets a consistently good result each time so I’d say pretty failsafe. I’ve made it multiple times now and anyone who’s not usually a cheesecake fan has been completely converted.

Oh have I got a cheesecake recipe for you guys Grin. Best cheesecake i have ever eaten. Its from a restaurant called La Vina in San Sebastian in Spain. I am a cheese cake nut and seriously, this sounds kinds blah when compared to all the fruit and flavored ones out there but it really is the BEST. I was dubious at first but havent eaten or made any other kind since.
Burnt Basque Cheesecake
1 kilo cream cheese, soft
400g white sugar
7 eggs
150mL heavy cream
1 tablespoon flour

Mix the creamcheese and sugar together in a mixer till smooth
Add the eggs 1 at a time and mix till incorporated each time
Add the cream and mix till smooth
Add the flour and mix till smooth
Have your oven preheated to 225 C with your shelf about 3/4 of the way up
Line a springform pan with parchment paper, just 2 sheets covering the whole pan and sticking up over the top a good couple inches. Dont worry if its not neat, it adds delicious caramelized parts as it cooks
Pour your batter into the lined pan and stick in the oven for 40ish minutes.
The top should be dark, almost looks burnt hence the name I guess and it should jiggle in the center.
It will have risen a good couple inches over the top of the pan, thats why you need the parchment sticking up. Let it cool to room temp then take the springform off and gently peel open the parchment. All the wrinkles in the cake when the uneven parchment has been will be all caramely.
No it doesnt have a crust and the flour can be omitted so can be gluten free. Please dont add vanilla or almond extract of orange extract till you try it plain and traditional first.
