In a lockdown baking fest we are trying to recreate lots of everyday favourites. At the moment it’s jammy dodgers, I’m fine with the biscuit part but really struggling with the jammy bit. Regular jam just too soft. Any ideas?

Sorry I don’t have the pics but we’ve done custard creams, bourbons, chocolate hobnobs, mini cheddars and the jammy dodgers with the dodgy jam!

Make your own jam. Leave boiling a bit longer than usual. Sets very firm!!

Yes I thought that would be the case, I’ve not made jam before although I have done chutneys so I think it’s the same kind of thing.

I've used cornflour before.

Dissolved in cold water, jam in a pan on the hob warming through, add the cornflour a little at a time stirring.

When I made them at school I used a boiled sweet in the middle, maybe that would be too hard 🤔? It might be worth trying it. I doubt your family will mind making and eating another batch of biscuits if that doesn’t work out!
