Help! How do I deal with these potatoes?

Ordered ready peeled potatoes but they're quite a large pack (6 servings) and use by is Monday BUT I don't think they'll be ok in the fridge once the pack is opened? So I think I have to cook them all up as soon as I open them? But then what?

It's only me here, not much room in freezer though I can possibly make a little room by using up some leftovers I have in there?

I was planning on dauphinois was have some jar dauphinois needs using up. Was going to have with veggie sausages. But that's just one maybe 2 meals?

I also don't have a masher and can't get one before Monday, but could mash with a fork? Could maybe make a veggie shepherds pie and freeze it?

Also planned some Mexican this week and so I also have lettuce to use up in next few days (plan was to make a mild chilli mix and have in wraps with lettuce, tomatoes, grated cheese, sour cream and guacamole sauce) so maybe could do some seasoned wedges?

Possibly some roast potatoes for a Sunday dinner.

So I'm not short on meal ideas I'm just not sure how to co-ordinate it all because I think I'd need to Cook them all in one day?

Hence - help! Cos I'm rubbish at organising things like this plus I'm very wary and not too knowledgeable on food safety.

So...how do I manage this?

Our local veg place was giving out bags of peeled potatoes last year. They’d last 4 - 5 days in the fridge. Just keep the bag tightly closed.

I think parboiling any I'm not using the first day might be an idea. I'm a bit wary of wasting them if I do nothing as I've not had them before and there's nothing on pack to say how to store once opened.

I'm thinking make a big batch of dauphinois as that also saves the jar hanging about too. Freeze the leftovers.

Parboil whatever's left having cut them into appropriate shapes for roasties and wedges? Which could then be further cut down at time of using for Spanish omelette, fried breakfast potatoes or even mash? I have a whisk I could use that for mashing no problem

They were only 85p for 6 servings! I think that's pretty good actually. Less than 15p per serving.

I just hadn't had fresh potatoes for a looooong time and fancied a change from my usual carbs of rice, noodles or instant mash or oven chips.

Also to use the dauphinois sauce and as I was planning Mexican into this weeks meals and I got some taco seasoning I was thinking some wedges.

Don't think I'm up to all the faff tonight, but looks like I'll have a busy day tomorrow sorting it all!

Might start off with a potato breakfast treat!

Late having dinner tonight thinking some Mexican style wraps as planned and have some of that lettuce - I'm starving now Grin

For the wedges cut up as needed par boil for 5 minutes and then drain and lay out on a baking tray. Let them cool for ten minutes and the place tray in freezer. Once frozen you can bag them up keep them in the freezer and defrost when needed. They can just go straight in the oven
