Hit me with your kid-friendly salads

So I want us as a family to make more of an effort to eat more vegetables. We are all guilty of eating really quickly as well, so my genius idea is that for dinner we’ll have a starter and a main meal, with the hope that the salad stuff and natural gap between courses will make us a bit healthier (and hopefully we’ll lose a bit of the lockdown/Christmas tinder!)

Personally I know I could live on diced red onion and tomatoes with some balsamic vinegar, but my kids will want some variety - they’re also (bar one) not great salad eaters anyway - so any good ideas would be welcomed. Doesn’t really have to be salad, so long as it’s naturally low cal and has a vegetable component. Don’t worry I will ensure the rest of the meal incorporates protein/carbs and the rest, might even low carb for me and husband.

Any bright ideas? Or does this seem like madness?!

In the summer I usually make as part of our meal a big platter with tomato's, cucumber, carrots beetroot feta salad leafs, radishes and sometimes hard boiled eggs that everyone can help them selves to and add any dressing that they want. The kids love it as they can eat what they want and I don't put any pressure on. The only argument they have is when one eats all the cucumbers Smile

I’d forgotten about coleslaw. I don’t like it, but the kids do. I might try making my own as I need to go and do a shop in a bit.

DD loves cous cous and roasted veg (courgettes, mushrooms, tomatoes, sweet potato, peppers, olives). Sometimes with a bit of of pesto mixed in.

I’ve also had success with a kind of take on cauliflower popcorn. Basically steam some small florets of cauliflower. Dip in egg then roll in breadcrumbs with some Parmesan (blue cheese also works well) and bake in the oven until crisp.

If I’m honest I’m probs more fussy than the kids when it comes to salads and veg in general.

we’re having a Nando’s takeaway tonight, I’m just about to make some home made coleslaw and we’re going to put them in wraps like that tik tok trend. Luckily, they’ll all eat that!

Sweetcorn and halved cherry tomatoes dressed with sesame oil and balsamic vinegar, salt and pepper. Very popular in our house.

My 11 year old loves tuna and avocado salad.

In the summer we often have tuna salad as our evening meal. I use tuna, boiled egg sliced, green beans, tomatoes and cucumber, peppers. Then serve it with new potatoes.

Mine will eat tons of coleslaw - finely sliced red cabbage, grated carrot, red onion and equal dollops of mayonnaise, salad cream and natural yoghurt.
I figure the 2 portions of raw veg counteracts the fatty dressing (use that to justify it to myself as well!)

I cook lots from the Wagamama cook book and my kids love it. Bean sprouts, mange tout, carrot and sweetcorn, lovely!

Might get DS1 to try fennel next.

Something with thinly sliced oranges? (My baby is obsessed with oranges)

Well, night one was an absolute wash Hmm

I did my Nando's fakeaway which was AMAZING even if I do say so myself Grin, I made coleslaw and prepared loads of crudites.

2 of 3 ate some stuff - the one I made the coleslaw for didn't eat any. I knew he'd be the tough one, he's always been a bit beige!

I'm leaving it till Monday (purely as it's my twins birthday tomorrow!) but lots of fab ideas here. I went shopping today and loaded up on practically every vegetable known to man, and some probably not, so I'll begin in earnest on Monday.
