Going vegetarian to reduce carbon footprint. Can you give me your tastiest veggie recipes?

Trying to persuade my reluctant husband that he will actually like some veggie recipes. We found a really good replacement for mince, so can make lasagna and spaghetti bolognese. But struggling with other stuff as he’s not keen on vegetables!

Lentils!
Love them, even my picky 4 yr old eats them. We have lentils spooned over brown rice and we serve a Indian style salad of diced tomatoes, cucumber and red onions (in a lemony dressing). Delicious and low cal too. If you want you can serve fried onions on top as a tarka but I dont miss it.

My husband is vegan although I do eat meat.
Can't stand meat substitutes.
We have things like:
Beetroot risotto with walnuts
Butternut squash risotto with pine nuts
Carrot and parsnip tagine with chickpeas and prunes
Cauliflower, potato and pea curry
Sweet potato, pepper and coconut curry
Peas, courgettes, pine nuts and mint with troife pasta
Barley 'risotto' with cauliflower
Sweet potato and lentil pie

@twointhemorning all of those sound yummy! Adult DD is vegan and has been for 3 years or more. We are currently locked down with her as she is forced to work from here and away from London. I don't mind cooking and sharing vegan food at all but find I easily run out of ideas

Veganism and vegetarianism is bad for the environment and is killing more animals than eating local grass fed meat. You are also degenerating yourself on this diet. Red rare meat and organs is the healthiest you can eat to sustain your body long term

we only eat meat/fish once a week for the same reason.
what we like:
quiche
tex-mex fajita/burrito/taco etc
curry
soups
pasta (macaroni cheese, tortelini, ravioli)

we find roasting pumpkin or cauliflower will give a good texture and flavour.

Avoid soy, and almond milk if you are thinking about ecological impact. Amazon rainforest and bees respectively
And avocados. They're destroying the planet.

Same here OP. We are a meat/fish and two veg family, so it's been a bit of a challenge!

We all like jacket potatoes, so we've tried different chili recipes. One of my kids doesn't like beans... so I made it with loads of veg, spices, sweetcorn, and mashed up some red lentils in the mix. Worked a treat.

We have different pasta dishes, aubergine chopped up quite small does feel a bit meaty for pasta sauces. We all love Richmond meat free sausages as well. Not keen on Quorn.

We have veg curries, risotto, stir fries with noodles, jacket potatoes. Kids are getting used to oat milk. We still have cheese, but less dairy in general.

if you look at co2 reduction, also havd a look at cooking methods.
cooking in the oven is pretty ineffective. microwave is better.
cooking large quantities are better than small.
