Braised red cabbage WITHOUT sugar?

I have red cabbage for a side dish. I have only ever used it to make coleslaw and it’s too late to pickle it. I’d like to braise it but all of the recipes I can find call for sugar / apple / raisins / cranberries and I cannot bear sweet flavours in a savoury meal.

Does anyone have a non-sweet recipe for braised red cabbage, please?

It has got both ingredients you’ve vetoed! However you could leave out the sugar. We’ve used cooking apples and with the cider vinegar it tastes nice and tangy rather than sweet.

Thank you- I think I’ll have to adapt one and that’s a good starting point. No apples at all, I’m afraid - fruit and meat in combination are absolutely verboten at my table Grin

I'm just steaming or boiling mine. I agree about the sweet sides. We had a mix of vegetables with a roast from a local bistro as a takeaway a few weeks ago and their vegetables were lovely. I'm sure the red cabbage was just steamed and I really enjoyed it.

I used to have a Danish boyfriend and had to grit my teeth politely through a lot of Danish Christmas dinners. They put a ton of sugar into the red cabbage AND all over the potatoes. Potatoes ARE sugar! They don’t need more!

Just steam it. I have never understood sweet vegetables, either.

Yy just steam it and then stir through some butter and pepper when it’s cooked

You could just braise it in butter and water with some spices. Fairly low heat and don't put too much liquid in, which means keeping a bit of an eye on it as you don't want it to burn or dry out. It can then get foil wrapped in a dish and left somewhere warm.
