Just that really. I'm trying to find a nice recipe/ready made thing that is special enough for Christmas dinner but has no nuts or mushrooms!! Does such a thing exist?

I just have all the veggies. Cook some roast potatoes and stuffing that is veggie for them. As well as veggie gravy. Or ask them what they'd like.

Larach · 17/12/2020 18:31

Delia Smith's parsnip roulade.

LunaNorth · 17/12/2020 18:32

Linda McCartney Beef-style roast with red wine and shallot glaze. DS1 loves it.

Aubergine parmigiana (if she likes aubergines)
Puff pastry with filling - eg goats cheese, pesto, sun blush tomato
Or to keep it simple one or two extra ‘special’ veg eg sweet potatoes, roasted Romano peppers or hispi cabbage

KirstenBlest · 17/12/2020 18:37

No goats cheese, butternut squash, beetroot, risotto etc.

I'd make veggie pigs in blankets with fake bacon and fake sausages, veggie gravy and veggie stuffing. Job done.

Yum, but obviously not Parmesan cheese, but there are quite a few hard cheeses similar to Parmesan cheese - usually the supermarket own brand.

I am vegetarian and one of my most successful Christmas dinners was spanakopita -- a Greek spinach and feta filo pie. I added Kalamata olives, extra feta and dill, and put the filo pastry over the top like a pie lid. It was really super and has no nuts or mushrooms in it.

Really tempted to make it again now I've been reminded of it! I got lots of compliments on it from the carnivores too and it worked well as a side dish for them as well.

KirstenBlest · 17/12/2020 18:39

And no spinach & ricotta canneloni.

Frostythesnowwoman · 17/12/2020 18:40

Or these look yum and would be great with roast veg, gravy etc!

If you don't want to cook a whole extra dish then I would go for something frozen from Cook Food - they have really lovely vegetarian options.

These butternut, beetroot and celeriac parcels look good: www.cookfood.net/products/butternut-beetroot-celeriac-parcels/

I've also had this quiche before and it is just insanely tasty (not like a bog-standard bought quiche in any way): www.cookfood.net/products/roasted-pepper-and-goats-cheese-quiche/

Dd is vegetarian and would definitely prefer to have everything except the meat with some vegetarian gravy and something like cauliflower cheese. She says the substitutes just aren’t christmassy enough and she doesn’t like being the only one having a different meal. Maybe some vegetarian pigs in blankets if you can find them (Quorn?) but otherwise roasties, yorkshire puds and a big pile of veg.

Svalberg · 17/12/2020 19:13

This smoked cheese & leek pithiver is good, I've done it before for between Christmas & New Year

JingsMahBucket · 17/12/2020 19:16

@MotherOfDragonite I was also going to suggest something from Cook. Their food is solid.

ForTheLoveOfCatFood · 17/12/2020 19:21

I’m veggie and just have extra stuffing Smile
Just use packet mix and can always add in some cheanuts/ precooked lentils to bulk out

ForTheLoveOfCatFood · 17/12/2020 19:21

Cauldron sausages are amazing! So that could be an option too

openallthetime · 17/12/2020 19:24

@KirstenBlest

If you make it nicely it's delish! with a rich slow cooked roasted tomato sauce, loads of garlic, nutmeggy ricotta and spinach, fresh pasta, cheesy on top with maybe breadcrumbs... Fiddly but heaven!

Canklesforankles · 17/12/2020 19:27

This is lovely and much lived by the teens/young adults in our family. It is delicious and special enough. There is a small amount of nuts on outside but not main ingredient at all and you could leave them out.

Don’t try and make it on Christmas Day though as it’s a Delia recipe with a few steps, all ok and then it comes together impressively. I make it Christmas Eve and it keeps fine in fridge and leftovers are nice although it gets taken away in doggy bags.

That's what dd1 and I are making.

ThatIsNotMyUsername · 17/12/2020 19:28

I like the veggie haggis. That way you can have the veggies (as long as there’s no duck fat).

eggandonion · 17/12/2020 19:33

I'd currently kill for a samosa! Not literally as I'm vegetarian, so don't really kill...
Jusrol vol au vent with a samosa filling looks fancy, along with all the sprouts and parsnips.

Persipan · 17/12/2020 19:37

Cauliflower cake. Sounds word, tastes awesome. Actually, pretty much any Yotam Ottolenghi recipe, he's fab!

Persipan · 17/12/2020 19:37

Sounds weird, even!

ttigerlilly · 17/12/2020 19:38

Quorn roast wins every time

Elphame · 17/12/2020 19:40

I haven't read all the replies so apologies if someone has already mentioned it but Camembert is not generally a vegetarian cheese so if you go for the baked Camembert suggestions avoid President etc

Aramox · 17/12/2020 19:43

Ottolenghi has a recipe for roast squash with breadcrumbs - spryliving.com/recipes/crusted-pumpkin-wedges-with-sour-cream/ -do it without the sour cream and it goes great with bread sauce, cranberry sauce and all the other veg!
