TRIFLE. A thread about trifle.

Last year I went traditional. Year before I did chocolate. This year who knows, I’m open to suggestions.

I can take or leave a jelly layer, not overly evangelical about it either way.

Not fond of a dragee though. Nasty crunchy mouth-feel.

I make trifle like my mum did - sponge, strawberries from a tin, strawberry jelly, strawberry blancmange (so you get a proper set layer), mahoosive amount of whipped cream, hundreds and thousands.
DH, ds and I have a christmas tradition of trifle for breakfast

Trifle would be the dessert for my last supper, strawberries in strawberry jelly, custard, cream, chocolate buttons and crumbled up flake. I've been known to eat it for breakfast at Christmas!

I just go for birds. We sometimes make the extra effort to do it all ourselves but oh still says that trifle is one think that should be out of a packet with dream topping and hundreds & thousands.

My late Mum did a mid-90s Good Housekeeping trifle which had booze soaked Amaretti biscuits and drained canned black cherries in it. I wish I had the recipe. If anyone has the recipe, please can they post it. I miss it a lot.

My kids hate trifle. I'm so disappointed I will never have a centrepiece pudding in a cut glass bowl all custard and dream-toppingy adorning my (non-existent) sideboard...

Nigella's chocolate cherry trifle (so Black Forest by another name). God it's divine. The recipe feeds loads so I usually halve it.

I've shared this before but this is mine, just something I've come up with over the years.

Ginger & Orange Trifle

Large Jamaica ginger cake some cut into star shapes and some sliced.
Put sliced bits into base of trifle dish, stand stars up around the outside so it can be seen through glass.
Soak base in some juice from a tin of clementines.
Make orange jelly with clementines and remaining juice.
Custard
Cream
Top with crumbled ginger biscuits and mini gingerbread men standing up!

Definitely add Cointreau/ similar if you have it.

It's bloody lovely!

Jamaica ginger cake, orange jelly with a splash of cream sherry, posh vanilla custard then thick whipped cream. Grated plain chocolate topping.

Bring on the jelly - two packets of jelly raspberry here - soaked into the sponge fingers. Heaven. Some raspberries also added to this layer. Next a tub of the best ready made custard I can get my hands on. Next whipped cream. Last layer - more raspberries and a crumbled up flake or two, maybe some chocolate buttons. It's old school 1980s trifle all the way. I love trifle but save it for Christmas Eve tea.

My mum does a truly amazing raspberry amaretto trifle that is so good I requested it instead of a birthday cake last year. It’s a Mary Berry recipe I think. Good old Mezza.

Trifle sponges soaked in sherry and orange juice (sometimes cointreau), orange segments, orange jelly, custard you can chew, a thick layer of whipped cream and grated chocolate orange. Job done.

No jelly
No pretend cream
No bought custard
No ratafia or similarly fussy biscuits

For me trifle needs Madeira wine, Madeira cake, tons of custard and cream and toasted flakes almonds. The flavouring can be raspberries/raspberry jam or butterscotch and banana a la Delia. But the basics are always the same.

ANY!! Absolutely any trifle. I really don't mind. So long as it's a really substantial bowl full. And preferably has some family history in it.

I do a chocolate cherry trifle. No jelly because I'm a Kiwi and we very sensibly think that's madness.

Chocolate cake, tinned cherries (or defrosted frozen ones), some of the juice from the cherry can, kirsch if no children, blackcurrant juice made by moi if the children are having some too (juice only really required if frozen cherries are used), Delia's custard recipe from her Christmas book, grated chocolate on top.

I get the leftovers for breakfast and I DO NOT SHARE.

Madeira cake - sliced in a bowl.

Place defrosted forest fruits on top.

Mix ready made custard with mascarpone cheese and place on top.

Whip cream - put on top. Decorate with crushed flake.

Eat, sharing if you have to.

I like these trifles with ginger cake in. Might have to experiment with one of those at some point before this year is out.
