Does lime and ginger go together?

DS wants to make some lime biscuits. Can I alter a recipe for lemon biscuits and use
lemon zest --> lime zest
mixed peel --> candied ginger

I know I could leave the mixed peel, but wondered if candied ginger would also work taste wise or if it will overpower the lime or be revolting!

Also in lots of savoury Thai(?) food.

I think it would work, candied ginger is loads nicer than mixed peel anyway.

I find I need more lime than lemon when I’ve done a swap. So maybe double the amount of zest. Are you going to ice them? If so you can put lime juice in the icing.
I’d also only use a little ginger as I think you’re right it might overpower.

Grin maybe a bit early to head to the drinks cupboard to try it out...

For 500g flour I usually use 1 lemon and 100g peel. Should I use 2-3 limes and 50g ginger? I won't ice them.

Lime and ginger go so well together. In your receipt though I’d up the ginger to 75g, candied ginger isn’t too strong and you want to be able to taste it. Or use 50g of stem ginger and pop in some of the syrup from the jar in the icing.

Crush a pack of ginger nuts and mix with melted butter, press out in an 8"/20cm tin or nice glass bowl and put in fridge.

Mix a 250g pack of ricotta and a 250g pack of mascarpone with juice and zest of 3 limes and some icing sugar to taste. Place on top of biscuit base and refrigerate till set. Can use chocolate drops or something to decorate, but I don't usually bother.

It can easily be adapted to other citrus fruit e.g. orange with a chocolate biscuit base, or lemon with digestive base, or other sharp fruit - blackcurrant or sour cherries or similar. I find an acid fruit works well with the creaminess.
