Pesto pasta with courgette, mushroom, brocolli and petit pois
Roast dinner. With the amount of veg we have with it it's probably the most healthy meal of the week!

Yummy big bowl of mixed salad dressed with olive oil and lemon, and some kind of lean protein (chicken, quorn, whatever you like).

Boiled or baked potatoes with a couple of veg (e.g. cabbage, broccoli, sprouts, carrots - whatever you like) and some kind of protein.

Chick peas, lentils, chunks of tomato, chunks of peppers, garlic and seasoning all cooked down very slowly in a pan (simmer), with olive oil. Yum!

Salmon, broccoli, asparagus, sugarsnap peas all chucked on a baking tray with a dressing, serve with brown rice - its a Roasting Tin recipe

Sit fry ginger chicken with peppers, baby corn, bean sprouts, carrot shavings and mushrooms.

Pea and ham soup with tons of split peas, lentils, carrot, Swede , butternut squash and onions. Throw in frozen spinach for extra vitamins.

Roast meat, roast spuds, carrot and Swede, broccoli, sprouts, cauliflower. Loads of gravy.

@RomaineCalm do you cook the quorn sausages for the same length of milk as the recipes says? I know quorn doesn’t always need as long.

Cajun chicken tray bake - loads of spices and a smidge of olive oil drizzled over chicken and a load of veggies and sweet potato and bunged in the oven. Served with salad on a particularly healthy day, or cous cous.

Warm kale salad: roasted sweet potato and carrots, fresh tomatoes, fresh kale, avocado, spring onions and toasted pumpkin seeds with french dressing

Spinach and mushroom omelette, with side salad of tomato, cucumber, avocado and red onions

Tuna rice salad - it’s canned tuna steak (good quality) mixed with a little brown rice, and tons of almost any salad veg or fresh frozen veg ( my favourites are cucumber, tomato, carrots, frozen peas, tinned sweetcorn, radishes) and some low fat mayonnaise, salt and pepper, mix all together. I’ve eaten this since I was a little kid, it’s great to use up any veg/salad in the fridge and we always have rice and tuna in the cupboard. It’s got protein, carbs and lots of vegetables and it’s very kid friendly - my kids love it!

Omelette is another family favourite - again put in anything you need using up in the fridge and it makes it more filling. Eggs are a great source of protein and very filling, served with side salad.

It’s so delicious but I do blend it all together once cooked - I prefer the texture and my kids eat it that way Grin
