I’m being nosey and looking for inspiration.

I feel like I spend my whole life cooking at the moment. It’s me, DH, and two DC (2 & 4). DH has IBD and can’t eat meat, and the 2 year old is a right fussy sod, so we usually eat different things to the kids (except pizza!) We eat with them half the week, after they’ve gone to bed there other half. Me and DH have a takeaway once a week, we usually have a family lunch out once a week.

Over the last couple of weeks DH and I have had (for dinner) aubergine curry, lentil veggie chilli, roast veg quesadillas, veggie lasagna, tomato & mozzarella risotto, veggie burger and chips, pizza (usual homemade)... we mostly just have these things on rotation. I like them all but I need new ideas really, and I struggle to find veggie recipes sometimes.

Lunch for me is usually a sandwich... egg, cheese, fish finger, tuna... breakfast porridge or toast.

I’m really interested in what other people eat!

Halloumi stew

You can't add that one then not include the recipe.

Come on @ForTheLoveOfCatFood ....

Loads of good ideas here! I started a similar thread the other day but this one is a lot better. I am also fed up with cooking on rotation and was getting really bored with the process. Which is a shame as I used to love cooking.

So we've started on a plan of one new recipe a week. So far we've had:
Chickpea and spinach curry
Beef paprikash
11-veg stir fry
Thai green curry
Chicken cacciatore
Moroccan chicken
Burnt aubergine chilli

All but the paprikash has been voted a win - dh said it tasted of school dinners so had leftovers and ds (18) ate dh's portion cod he liked it.

Dh is a bit sneery at veggie stuff but I want to eat more plant based stuff and ds has a relatively new girlfriend who is veggie so he's following me about when I cook veggie to learn things to cook for her. Dd2 also happy to eat veggie so I'm doing those things when he's away overnight with work. I can always grill some chicken to add to the curry for him (or he can do it himself!)

Off to reread the thread and choose my new recipe for this week. Several have already been done more than once, so looking for another winner!

Oh that looks delicious @nomorespaghetti Shock! Love the idea of swapping the halloumi for aubergine slices too

ForTheLoveOfCatFood · 04/12/2020 22:22

That’s the one! I add orzo and simmer for whatever time the orzo takes if I want to bulk it out. Very tasty Smile

Also I have harissa paste in just bog standard supermarket one and tend to add that in place of chillis - depends how spicy you want it
