Pavlova - what to do with the egg yolks?

I want to try making a pavlova sometime soon for the first time - I hope it doesn’t go disastrously wrong.

Anyway, I’m kind of hesitant to do it though as I don’t want to waste all those egg yolks - what can you do with them?

Lemon tart

Doubling the weight of whites with caster sugar, mixing two heaped cornflour with some lemon juice to make a pouring paste, gives me a perfect marshmallow pavlova, with a crunchy outside.

Heating the tray to very hot prevents a leaking bottom.

I'd make a pavlova using an Australian recipe (containing cornflower and vinegar/cream of tartar)
With the yolks I'd make passionfruit curd to fill the pav, before decorating with more passionfruit and other fruit and lots of whipped cream.

@FlibbertyGiblets I swear by Felicity Cloake in the guardian www.theguardian.com/lifeandstyle/wordofmouth/2012/sep/20/how-to-cook-perfect-creme-brulee
So simple but bloody gorgeous

Creme caramel! It was a standard joke among Aussie and Kiwi friends, that where there was a pavlova, there would be a Creme caramel.
