What veg would you say work best in a vegetable curry ?

I add cashews to most curries. They’re lovely.

Potato, cauliflower, carrots, spinach, peppers. Our local take away used to do one with sprouts in that was excellent.

Pretty sure the veg korma and passanda I used to have, had larder chunks of potato, cauliflower, onions and peas

I like cauliflower but need to be roasted first so it has lovely texture.
Also love aubergine curry, but it need to be deep fried first until soft enough to melt in your mouth. Divine.

Cauliflower
Potato
Sweet potato
Butternut squash
Mushrooms
Spinach
Aubergine
Green beans

Then pulses for maximum deliciousness. And mango chutney.
